I want to make a great vegetarian dish for dinner, I am not a vegetartian so this is completely new to me. I have been seeing a guy the is a vegetarian for about 9months now and I am tired of eating out all the time. I want to make some great dishes at home. He doesn't eat any kind of meat or seafood nor does he eat eggs. But loves all other dairy products cheese, milk etc. Please offer whatever great ideas you have. Thanks so much.

blow him away with a dish that only looks hard but wasn't buy eggplant 2 large ones make a mixture of bread crumbs with parmesan added dip the egg plants into milk and then into the bread crumbs pan fry them in alittle olive oil till crispy on both sides when done let them drain on a dish with paper towel. in a cassarole dish or even little bit larger pan put a little tomato sauce try to get vegetable garden tomato sauce with mush rooms zucchini and other veges or get ragu mushroom sauce any thing that is vege conscious. mix alittle with ricotta cheese and make sure well mixed then you should still have a jar and half left add alittle sauce on the bottom of the dish and then place some eggplant until covered then add some more sauce and ricotta and sauce mixture then add more egg plant and repeat on the top add the rest of the sauce and mozzerella cheese on top and bake till melted and all warmed up
so now you have a eggplant lasagna with tons of flavor and you won't even know also make garlic bread or toasted italian bread for the side of your meal

I LOVE Quorn Tenders and use them a few times a week. One thing that I make that is fantastic is a "Philly cheese steak platter". Saute quorn Tenders in a little olive oil and add a splash of veggie stock and marsala cooking wine and let cook down. Once almost done, push tenders into middle of pan and sprinkle shredded cheddar cheese and let melt. Top cheese with sauteed onions and let heat through. Serve as a platter or on a hard roll. My meat eating husband raved about it.

Make Lasagne Florentine-just like regular lasagne minus the meat and add chopped defrosted and drained spinach to the ricotta cheese. Use marinara sauce.

Try eggplant parmesean. It's reeaaally good. Use fake eggs to glue the breadcrumbs onto the eggplant. And then fry it. And smother in tomato sauce. And cheese. Lots of it, too. Serve with pasta, and you're done.

i have jamie olivers cookbook soft copy if u are interested. too tedious for me to read and find out the vetgetarian dishes.
