That's something she is going to have to do on her own. Her doctor needs to discuss with her what and what not to eat. All you can do is talk to her about it. Good Luck!

If your mom was just diagnosed, it is going to be hard for her to change her eating habits right away because she has gone through her life being able to eat whatever she wants. Do some research and find a good Diabetic Educator or a nutritionist that your mom can talk to, it might be a good idea to go with her to show her that you care and that you are willing to help.

Does your mom have Type I or Type II diabetes? In either case she will need medication in addition to changing her eating habits. If she has Type I, then she needs insulin shots. If she has Type II, then she will need medication by mouth for that unless, the medication by mouth does not work for her and she will end up needing insulin shots. Also, in either case, what she eats is very important, as well as, when she eats. The two most important rules for a diabetic is: try to eat more of the low glycemic foods and never skip any meals. It is better to eat small amounts of food 5x a day than to eat larger meals 3x a day. And, some exercise is also most important.
Take a look at the following link for a list of the glycemic food index so you will have a better understanding of what foods are appropriate for diabetics: http://72.14.209.104/search?q=cache:29pUEju5oAMJ:www.holistic-online.com/Remedies/weight/weight_diet-Low-GI-foods.htm+low+glycemic+foods&hl=en&gl=us&ct=clnk&cd=9
And good luck with helping your mom. Your support will help her.

You have to educate your mom on the effects of uncontrolled diabetes.
This is one disease she has control over.
Try surfing some of the diabetes sites or better yet see your doctor for a referral to a diabetes centre.

Just try to get her to eat good food. I visited a diabectic educator that really helped me learn what was good to eat.

I would think if you have a problem, it wouldn't be hard to change.
Tell her it can cause blindness, so maybe that will help.
