i'm having my in laws over for a week in a few days. i'm trying to come up with a menu for the week for food that i can cook (we'll go out to eat, but i also want to cook).

can you suggest some VEGETARIAN meals (we're indian, but we also eat other foods)? i'd love some ideas.

i'm thinking of making vegetarian chili and sandwiches the night they come over.

Are they vegetarian as well? If not, they may be opposed to eating all vegetarian cuisine. Soups and sandwiches are always a great option, because they allow for customization if meat eaters are present. If not, then experiment with combinations of traditional favorites. A good crowd-pleaser is a pre-baked pizza crust filled with salad. For a little cajun flavor, make some spicy red beans and rice. Another great veggie meal is Mongolian BBQ. Heat a wok, and drizzle a little bit of olive oil in the bottom. Let all guests make their own plate of raw veggies (broccoli, cabbage, mushrooms, white & green onions, etc), tofu, bean sprouts, etc, and take turns cooking them with some sauce. (Wal-Mart has a great vegetarian sauce in the produce section, a Korean BBQ, a little spicy, but YUM!, or use Newman's Seasame Ginger light salad dressing). Serve with rice, lo mein noodles, tortillas or all of the above. Grilling out veggie burgers and vegetable kabobs is always a tasty treat, too. Have fun, experiment a little. Good luck!! ♥

Hummus and pitas are always good.

Roast vegetables by drizzling olive oil on them and popping them in the oven for 10-15 mins. Great for broccoli, asperagus, carrots, sweet potatoes (sliced thin, takes a little longer; 25 mins); add onions, leeks, garlic, or shallots for extra flavor. Roast cherry tomatoes with a little sherry and garlic. YUM!

Brushetta: chop 5 or 6 big ripe tomatoes with 3 or 4 cloves of garlic; add olive oil, fresh or dried basil, and salt. Serve on sliced bread or pitas.

Marinate mushrooms in olive oil, lemon juice, and herbs. Serve cold as a salad or grill until hot.

Antipasto salad: cherry tomatoes, artichoke hearts, mushrooms, shallots, parsley, fresh basil. Dress with basalmic vinegar and garlic salt. Chill.
