This is a fantastic recipe that I make often. It's delicious.
Hot Mexican Tamale Bean Pie
1 cup [120 g (4 oz)] quick cook polenta
1 egg
2 cups [450 ml (15 fl oz)] skimmed milk
1 cup 120 g (4 oz) reduced-fat cheddar cheese
4 tablespoons chopped coriander
1 tablespoon of vegetable oil
2 large red onions, roughly chopped
2 garlic cloves, minced
1/3 cup [50 g (2 oz)] pickled hot chillies chopped
350 g pack Quorn mince
400 g can chopped tomatoes
2 tablespoons tomato puree
16 ounce/420 g can mixed beans, drain and rinse
1 cup [250 ml (8 fl oz)] vegetable stock
grated zest and juice of 1 lime
salt and freshly ground black pepper
1.Beat together the polenta, egg, milk, cheese and 2 tablespoons of the coriander. Season and leave to stand for 20 minute to allow the poltenta to swell
2.Meanwhile, heat the oil in a large pan and fry the onions and garlic for 3 – 4 minutes, stirring occasionally, until softened slightly. Add 25 g (1 oz) of the chillies, the Quorn mince, tomatoes, tomato puree, mixed pulses, stock, lime zest and juice and remaining coriander. Bring to the boil and simmer for 15 minutes. Season to taste and pour into an ovenproof dish
3.Pre-heat the gill to high. Stir the remaining chillies into the polenta mixture and spoon over the mince mixture to cover. Grill for 4-5 minutes until golden

Cottage pie:
Shopping List
Serves 4
• Topping
• 700g (1½ lb) potatoes, peeled and roughly chopped
• 225g (½ lb) parsnip, peeled and chopped
• 30ml (2 tablespoons) semi-skimmed milk
• Filling
• 15ml (1 tablespoon) olive oil
• 1 medium onion, finely chopped
• 1 medium carrot, finely chopped
• 250g (9oz) Quorn mince
• 175ml (7fl oz) vegetable stock
• 10ml (1 dessertspoon) vegetarian Worcestershire Sauce - available in large supermarkets or health food shops, alternatively use soy sauce instead
• salt and freshly ground pepper
Cooking Instructions
1. Preheat the oven to 180C, 350F, Gas Mark 4
2. Boil the potatoes and parsnip until tender. Drain and set aside.
3. Meanwhile heat the oil in another pan, add the onion and the carrot and fry gently until the onions are soft.
4. Add the Quorn mince, vegetable stock, Worcestershire sauce and seasoning. Place into an oven proof dish.
5. Mash the potatoes and parsnip with the milk until smooth, season to taste with the salt and pepper. Place the topping over the Quorn filling and fluff up with a fork.
6. Bake for 30-35 minutes until the topping is crisp.
7. Serve immediately with a selection of fresh vegetables.

Meatballs - - - these are loads better than the ready made quorn meatballs:
Big bowl:
Grind some frozen quorn mince in a food processor
Add some wholemeal breadcrumbs
beaten egg
lemon zest, salt, pepper, chopped dill (or garlic and chilli)
Mix with hand to stick togeeather. Form into small balls and shallow fry. Have with a good quality tomato sauce and pasta. Or in pitta bread with salad.
Try it out - will be worth the time it takes to make them!

Spaghetti bolongaise would be the next obvious choice! Shepherd's pie? (you just need some veg (peas, carrots, sweetcorn is good) and some mashed potato. Bake it until bubbling, then grill to brown the top. How about lasagne - make it just the same but use Quorn?

I like to make bolognese with it. Use a carton of passata, chopped onions, mushrooms and peppers to give it some flavour and add your quorn mince, season well and also i like to add a tiny bit of beef bovril so that it tastes like beef mince then serve with some nice pasta and sprinkle cheese on top. A low fat, filling dinner!!

My mum and I always cook spag bol with quorn. Just fry onion, pepper I put small bits of courgette in, then add mince and sauce. yum yum. You can adapt that recipe for shepard pie etc to

Anything that requires mince to be used and a sauce. I don't remember quorn mince sticking together well enough for meat balls!

you can do any meat mince recipe, just replace the meat with the quorn, my Mum cannot eat red meat due to her cholesterol & heart condition, so I make her all sorts of things for the freezer with quorn mince, cottage pie, meat loaf, bolognase, burgers, mini steamed meat puddings. I also do up batches of quorn mince with onion & gravy so she can just pour it over mash & cabbage & its rather lovely actually, very tasty & very easy to do.
