Some how i have the bad habit of peeping into other culture-specific questions, out of the curiosity to know what others do and think in their own circles. How, I wish I know the answer, so that I can make myself acceptable to you. I am a South Indian, a Tamil, to be specific. There is a Maharashtra connection to our 'Sambar', a special cuisine of ours. It is said this fluid vegetarian item was made for the first time in the Sarfogee royalty, and perhaps owes its name to the Sambaji royalty, who were Maratha rulers of Tanjore.

I think you need to know that The world is A bit Bigger then Your "Maha..."
I think it may not sound well But Sorry to say that in My Past 10 Year Internet experience I seen Lacks of time that it is only for "Mahar.."
What is this non-sense Yaar

A midwestern state of India, Maharashtra, carries a history of many great golden men and events.

Where food is concerned the range and variety are mindboggling and tongue tickling. Here you will find strong aromas of spices (like black maharashtrian masala), garlic and ginger in abundance.
Many vegetables like brinjal, tomatoes, etc. are stuffed with spicy masala fillings and cooked in the oil in which they are seasoned, till tender. This brings out the rich flavour of the veggies, since they are cooked in their own juices. Though to speed up the cooking process, as well as to cut down oil use (calories!) people tend to add water to their vegetables.
