I don't know anyplace in Houston, but I mail order German deli items from a place called German Deli, www.germandeli.com, which is located up in DFW. Not exactly in the neighborhood, but close enough to get things quickly through delivery. They have a website and a store, if you are up to the trip. The prices aren't bad, and the selection is pretty good.
If you wanted to make quark, it's not actually that hard. I add 1/4 cup of organic buttermilk to a 1/2 gallon of warm milk, and let it sit overnight. Just don't use UHT type milk, and you can use whole, 2% or skim depending on how much fat you want in the end. Next day, you cut up the curds and slowly heat the mix up to around 120. Drain it like you do yogurt cheese, in a seive lined with cheesecloth or a white paper towel, overnight in the fridge. That's quark, pure and simple. My grandma made it this way for years, and how I still do it. It's basically just very smooth cottage cheese, and depending on your recipe, you might be able to use a full or low fat cottage cheese that's been whirled in the blender or food processor. It works fine for cheesecakes. Hope this helps.
