The best dinner to have when a Veggie dines with a Meat eater is a stir fry. You can be creative and put in what ever veggies you want, serve it with rice or noodles. Make sure you check all the labels of the sauces you use and check to see that your friend eats all of the ingredients first. Peanut sauces are usually a good pick. If you feel you need to eat some meat cook up some meat for yourself on the side. Make sure not to use any of the same utensils when preparing your meat. Hope all works out.
As a side note, it is very nice of you to offer to make a vegan a meal, it is definitely a challenge.

Spaghetti Squash Bowls-
1 spaghetti squash
1 medium onion
1 green pepper
1 clove garlic
4 medium tomatoes
2 TBS Extra Virgin Olive Oil
salt & pepper
1/4 tsp each oregano, basil, fennel seed
2 TBS butter
1/4 c parmesan

Pierce squash in several places for steam. Place on paper towel and microwave 18-23 min. turning after 8 min. until tender. Let stand uncovered @ 10 min. Cook onion, green pepper,and garlic in oil @5 min. Stir in tomatoes, s&p, oregano, basil and fennel. Simmer uncovered @ 5 min. Cut squash in half and discard seeds. Toss the fibers with butter and parmesan. Spoon tomato over squash and serve inside squash shell.

Mushroom Walnut Sauce on Pasta
2 Tbsp. extra virgin olive oil
8 oz. Mushrooms - sliced
1/4 C. Walnuts - chopped
3/4 C. Heavy whipping cream
1/4 tsp. Black pepper
1/2 C. Fresh Parmesan - grated

Heat olive oil in large skillet over medium heat. Saute mushrooms and walnuts until mushrooms are golden. Add cream and cook stirring frequently for 5 minutes until slightly thickened. Turn heat to warm and when cream stops simmering, add pepper and Parmesan and stir until sauce is smooth. Do not boil. Serve over pasta. Especially good w/ stuffed pastas.

Does he eat cheese? If so, make a cheese & spinach lasagna.
If not, meatless spaghetti with salad & garlic bread.
