Kung Pao Tofu

1 pound extra frim tofu -- cubed
1 large red bell pepper -- chopped
1 large yellow bell pepper -- chopped
1/4 cup skinless peanuts
1 teaspoon sesame oil
2 tablespoons cornstarch
2 tablespoons water
combine below for marinade
1 cup sesame oil
1/3 cup rice wine vinegar
1/4 cup brown rice syrup
3 cloves garlic -- minced
1/2 cup tamari soy sauce
1 tablespoon ginger -- minced
1 bunch green onions -- chopped
1 teaspoon red pepper flakes
1 pinch cayenne pepper
Marinate tofu in above mixture for 1 hour
Save marinade for latter use
Bake tofu @350 for 20 minutes
Saute in sesame oil bell peppers until soft
Add peanuts, continue until toasted
Add marinade and simmer
Mix cornstarch and water, add to pan and stir until thickened
Remove from heat and toss in tofu.
NOTES : Can served with angel hair pasta

Tofu is really pretty simple - I'd recommend going for the firm kind myself. Just cut it up into chunks and leave it to marinade for a while - you can make your own sauce or just use a store bought one if you need to save some time. Then you can bake it or fry it off with some veggies - delicious and it only needs a few minutes to cook if you do it stir-fry style. It will keep fine in a fridge and should be all right until lunch even if you can't refrigerate it - get a coolbag for your lunch and maybe an ice pack, you'll do fine.
Basically you can use tofu as a substitute for meat in any recipe - it won't taste the same and it might take a bit of experimenting to get it just right but you should be able to make it work.

Cajun Tofu
2 pounds firm tofu, drained and cut into 3/4-inch cubes *
1 medium red bell pepper, finely chopped
1 medium green bell pepper, finely chopped
1 large white onion, finely chopped
1 cup chopped celery
2 cans cooked, peeled tomatoes
4 cans tomato sauce
1 gallon water or vegetable stock
2 tablespoons finely chopped parsley
1/2 cup finely sliced spring onions
2 tablespoons Worcestershire sauce
2 teaspoons salt
Diced red chillies, to taste
1 minced small green chilli pepper
2 1/2 teaspoons black pepper
2 teaspoons garlic salt
3 teaspoons paprika
3 or 4 fresh bay leaves
Fresh parsley sprigs
Fry tofu in very hot olive or peanut oil until golden to seal. Pour oil from above into bottom of stock pot, adding enough to cover the bottom of the pot, if necessary. Make a roux by adding an equal amount of flour, cooking until thickened. Add remaining ingredients except parsley. Simmer for 25 minutes.
Add drained tofu, place lid on pot and simmer for another 30 minutes, stirring occasionally. Add bay leaves and let cool for 15 minutes. Reheat if necessary and serve over steamed rice. Top with fresh parsley.

Hi, the easy way with tofu is to pan fry it in olive oil till brown. Chop some garlic and drop it into soya sauce and balsamic vinegar. Eat the tofu dipped in this & it is heaven ...
Another easy receipe is to cook the tofu with tau jio (fermented
salty beans that comes in a bottle & is really fragrant)
Pour some oil in the pan, add some shallots, drop in the tofu & stir fry, pour in the tau jio stir fry & add some water . Cover up & let is simmer for tofu to really soak up the flavour add some sugar to taste. Happy cooking !

Get some instant ramen noodles from an oriental supermarket, cover them in boiling water for a couple of minutes, add firm tofu, spinich, fresh coriander, fresh chile and chopped spring onion. It will take no more than 5 minutes to make so you can have it at work. Wonderful

If you want to make tofu quite often, then I suggest you buy the Book Tofu cookery. You an find it second hand on amazon.com or eBay half.com. It's one of the best tofu cookbooks ever.
