The best recipe I ever found for curried goat was in the Time-Life Recipes of the World Series in the Carribean book. I lost the book in a house fire, but found this recipe online and it's almost identical, as far as I can recall. Enjoy!

Jamaican Style Curried Goat
Ingredients:
1 Cup vegetable shortening or canola oil
3 lb goat, chopped into cubes (bone in or out)
2 large white or yellow onions, finely chopped
4 Tbsp curry powder (experiment with different curries)
3 Tbsp dried red pepper flakes
1 bay leaf
1 tsp allspice
1 can coconut milk or cream (I use Coco Loco)
1 Quartchicken stock
2 Tablespoon(s) fresh lime juice

Directions:
1. Melt shortening or heat oil in skillet and then brown all the chunks of goat. Remove to a large covered heavy pot.

2. Saute the onions in the leftover oil and goat fat. When they're transparent add the curry powder and red pepper and saute for another few minutes. Add the onion-spice mixture to the large pot.

3. Add bay leaf, allspice, coconut milk or cream, and enough stock to cover the meat. Season with salt and pepper. Simmer gently until meat is tender. This can take between 2-4 hours.

4. Just before serving, add the fresh lime juice and cook 2-3 minutes more. Serve over boiled rice.
We like to serve it with raisins, pineapple chunks, chopped boiled egg, crumbled bacon, salted peanuts and Dayton's Mango Chutney.

Avoid goat, its nowhere near as nice as lamb or even kudu or meat like that.

If you are going to use goat, slow cook it with carrots, potatoes, lots of curry leaves. 2tsp of garam masala, 1tsp chilli powder, fresh coriander, kaffir leaves, an onion, 3 cloves garlic, 8 tomatoes. Salt and pepper to season it

Get them in a big pot and cook all but the carrots and potatoes for 1 1/2 hours on a low heat, then add the remaining vegetables and cook for a further 30 mins. For the last 5 minutes, *** fresh corainder !!

Delicious !!!

Any Pakistani cooking website will have tons of recipes.
