I am trying to go vegan but I am finding it quite hard. I want to be healthy and would rather not put towards the major cull of animals for food. I have found a few websites but does anyone know any good receipes that dont use eggplant, squash or chickpeas. im quite a picky person and its hard to turn vegan when i will only eat certain vegtables. please help me.

look at chinese food instead of mexican or east indian. many normal chinese and japanese recipes are meat free. make sure to get all proteins and include nuts as well as beans and corn and rice. When you say sqash do you mean hard squash like acorns and buttere nut or summer squash. I am very dissapointed with squash lately myself. it is picked unripe and lacks flavour or texture. As for chick peas and eggplant, one gets tired of middle eastern food all the time. Humous and Falafell is OK now and then, but not all the time.

You can find lots of lovely vegetarian recipes in oriental cookbooks too.
You will also want to look at how you are going to get a healthy diet without eating any animal products. If you are eating a completely vegan diet, you will want to insure that you are otherwise living a healthy lifestyle (No smoking, etc) as you will have fewer resources of certain vitamins, etc to combat the effect of these activities.
You should also try to vary your diet quite a bit and insure that you get enough protein. Some of the foods you might not like now, you may find liking later. As you reduce your dependence on meats, dairy and junk food your taste may change some.
I'm not vegan, but am very close to vegetarian. I do still eat some fish, as the oils are very beneficial. I still drink some milk, and enjoy cheese.
Though you can live a healthy life without animal products, it's important to note that the human body is designed as an omnivore. It works efficiently with a varied diet and restricting it to no meat or animal products means that you'll have to do a certain amount of work insuring that you get everything you need.

i admire peppered tofu steak with mustard sauce. in basic terms cover one area of the tofu with floor pepper and salt and fry until brown and then make a sauce with soya milk, vegan margarine and mustard.
