You are soo kidding right? You just got the right person to answer your question. Read my name, and the type of cheese I like appears in my name. No, its not magic, but that was a question I WAS going to ask when I first started to learn about Yahoo! Answers.
P.s. Cheddar - mild is the best. :)

well, if it's just cheese by itself then the Baby Bell (sp??) little cheeses are awesome!! (they are wrapped in wax and kinda look like a Pac Man when you unwrap them)
but to eat with crackers definitely Camembert or maybe Brie or Gouda....mmmm....I love cheese!!!!!

I love eating Gouda, mild cheddar cheese and brie on certain occasions. Especially when you warm it up, and eat it all gooey on bread or crackers.

Gouda and cheddar are good, so is mozzarella, but my all time fave is pepper jack cheese! Love the spicy kick!

Tillamook Extra Sharp Cheddar. I can't stop eating it. It's practically a meal in itself!
