It's totally true that you can buy the curry blocks easily..! In the UK & US, at least..!!

But you don't need to find a "Chinese" food store, any Asian food store or Oriental food store should stock it. It's not actually Chinese - it's just the Oriental version of Indian curry. That's why it doesn't COOK like a Chinese meal...! If you're lucky, you'll get a packet with English instructions stuck over the original. If not, it's still easy to make! The meat's more tender if you use a pressure cooker!

Fry the chunks of meat until slightly golden.

Add the chopped vegetables (use your memory to tell you what they put in your favourite take-away bought curry!)

Add the amount of water in the main ingredient list, there'll probably be a number followed by ml., with the number of cups in brackets just after it. This is for the WHOLE boxful by the way, so if you buy a box with 2 blocks in it, add just over half the amount of water they say. (The amount for half the packet is usually on there somewhere, but it can be hard to find if there's no translation! As a guide, if the main ingredient list says 1200 ml., the quantity for half the box is 700 ml. If the main ingredient list says 1400 ml., the half quantity is 800 ml. I got that straight from a couple of boxes in my cupboard!)

Then put the lid on, bring it to the boil, and cook for at LEAST 20 minutes - the longer you cook it, the more tender the meat will be - and the more soft the veg will become. After this, add the block of curry, and stir until it's dissolved. Your "Chinese" style curry will appear before your eyes like magic...!

(If you use a pressure cooker, add the water to the meat and pressure cook it for about 8 minutes. Then add the veg and pressure cook for another 3 or 4 minutes. Add the curry at the end as normal.)

Obviously, if you just want the sauce you can either add a piece of the block to boiling water, or to stock. In this case, the curry roux would be more convenient - it's just granulated, and you add it until the sauce is thick enough.

Buy some "Maysan" original curry sauce paste - any Chinese supermarket sells it, the instructions are in English, and you just whisk the paste into cold water, and bring to the boil.

It is made in England by Maysan Foods Ltd, Meadowfield Estate,
Ponteland, Newcastle upon Tyne NE20 6SD tel 01661 823055, and I am sure they will advise you as to stockists if you have difficulty getting it.

hm.. Chinese curry is not quite authentic, as I don't think they eat curry in China :P
Anyway, buy tubs of curry paste from asian supermarket. you mix it with hot water in a pan, until the consistency is not too thin... then add cooked chicken (any meat) cubes, add sliced carrot, onion cubes, mushroom quarters... WALA! Chinese curry.. easiest recipe from my flatmate!! I tried and tested it, tasted good. no seasoning required!!

best served with boiled/friend rice OR chips :P

Go to Chinese supermarket and get a curry pest, or try Japanese supermarket and get curry roux, then melt it in hot water. You can add some oil if you want.

Go to a Chinese supermarket, in most large towns, they supply trays of paste for you to water down. Very close to the takeaway curry sauce.
