Hit the frozen food section at Costco/Sam's Club. They have bean and cheese mini burritoes, mini veggie eggrolls and spring rolls, borrow a crockpot and fill it with frozen veggie meatballs. Dump a jar or two of spaghetti sauce over it and let it go on low for about 10 to 12 hours (start it in a.m.) Put out toothpicks next to the crockpot for folks to spear them with...
Fruit tray is always a good bet, buy cheap pound cakes and slice them into finger sized pieces to go along with the fruit...
What about mini cheese pizzas? You know... like Bagel Bites...

Grilled quesadillas! Take two flour tortillas and put cheese and salsa between them and fry in a pan til browned and the inside melty and then cut into wedges...serve with sour cream! You can add anything you'd like in the middle, of course...and they keep very well after you cook them, just pop them in a baking pan in the oven on low (before you cut them) to keep them warm. ENJOY!!!

I have a quick and easy recipe for Peanut Butter Cookies and everyone loves cookies. 1 cup crunchy peanut butter, 1 egg, and 1 cup sugar. Roll into balls and press flat with fork on cookie sheet. Sprinkle with a little more sugar and bake at 350 degrees for about 10 minutes. Yummy!

I like skewers of pineapple chunks (fresh or canned) chunks of cheese, can finish with a marachino cherry or apple chunks...served with a fruit dip and you can get "fun" skewers from a party store.....
another realllly good snack is...
speared cucumbers..soaked in lime juice and sprinkled with
cayenne pepper...very pretty, not too spicy like you would think..and very refreshing...
dill and relish tray with olives, some veggies and dip...

Hit the frozen foods department in your grocery store--lots of great frozen appetizers to bake like jalapeno poppers, pizza rolls, mini quesadilla rolls, cheesy bread sticks, etc. And there's always the deli department where they make up platters of food that look great and save you tons of time.
