FROM EXPERIENCE I'D SAY COLOR DOSN'T MATTER -BUT THE WHITE MASA HOLDS ITS MOIST FLAVOR MUCH LONGER THAN THE YELLOW -THE REASON I THINK IS THE YELLOW IS A COARSER GRIND AND USUALLY HAS ACHIOTE COLORING ADDED
I MUCH PREFER THE WHITE ITS REALLY MORE TRADITIONAL !!
I'VE ALSO NOTICED ON THE OTHER RECIPES FOR TAMALES THAT -TOMATILLOS AND CUMMIN ARE NOT MENTIONED WHEN PREPARING THE PORK-SHOULDER !! WONDER WHAT THOSE TASTED LIKE EWWW !!
