After peeling, I continue to ribbon cut the parsnips and also some carrots with the peeler. I stir fry them in some butter, nutmeg and brown sugar until they are El 'Dante. Sometimes I add fresh sugar peas.

Nice white tender roots with a dash of salt and pepper and a hint of butter and maple syrup......never knew more than the typical ones in the store which are not to be eaten alone but within a soup or with flavor added!!! Are there different kinds that I do not know about?

They are great in soup,but the best I had was thin sliced on a mandolin,deep fried like a potato chip and seasoned.

my favorite on is the one that rotted in the garden before i got to pick it. they taste like creisote.
