I studied culinary just like you. Right before graduation, I had a couple of On-the-JOB-trainings in some hotels and small restaurant. That helped me to gain experience in how to really become a chef. And also I was able to interact with chefs so I got to ask them how they started, what majors did they take in college or in culinary schools, what jobs did they apply for the first time they started working, etc.

So, if I were you, while schooling, have maybe a part time job in maybe hotels or small fine dining restaurants to be able to interact with chefs... Get yourself exposed to the culinary world don't just relay on the teaching in the school but hands-on application is the best teacher. =)

My hubby started out by getting a job at a local bakery at the same time he started culinary school. He used culinary school not only to learn skills and techniques but also to figure out what he DIDN"T want to do as a chef and what type of cuisine he wanted to specialize in. Due to school and his work experience he decided he really did not want to be a baker, so he got a job as a cook at a local Italian restaurant.

He is now a personal chef but I know he always tells me how important it is to go to school AND get the experience so you know exactly what you want to do!
