Potatos or a can of chickpeas, reducing can add some thickening, but also tend to strenghten the curry flavour.

Flour is O.K., but make sure to cook it out, mix it with a small amount of oil, and stir it in slowly, the water and flour paste tends to take longer to cook out the flour taste.

Flour will thicken it also... but you could simmer out the water.
