Here's a taster :-P
Stuffed Tomatoes
(4 persons)
8 tomatoes
200grs red lentils or similar.
1 onion (cut in thin strips)
1 carrot (diced)
1 celery stick (diced)
1 cube of vegetable flavour (Oxo or similar)
sprinkle of ground cummin
3 tbs of broth or balsamic vinegar or wine, etc for "sauteeing"soem b
some bread crumbs ( approx 3 large spoons)
fresh coriander or substitute
salt/pepper (to taste/optional)
Filling:
Boil lentils (salt to taste). Put vegetable cube in and boil
for 15 minutes. At the same time, saute the onion. When
brown add carrot, celery and cook by moving the mix
with a spoon (I use a wooden spoon). Add red lentils, bread
crumbs and incorporate with vegetables.
At this point is a good idea to test for taste with salt, pepper
and cummin. At the end, add coriander, mix and put aside.
Cut the top of tomatoes and remove core, ( I save it to
use as a sandwich spread), drain juice and fill them with stuffing.
Bake for 45 min on Low.

Bell peppers, zucchini and tomatoes are all delicious stuffed with the rice and meat mixture we associate with stuffed peppers.
Tomatoes are great stuffed with cold stuff as well, such as tuna or chicken salad.
Spuds are great stuffed with just about everything as well, but I suggest you stay away from rice based stuffing, as it all ends up being a carb fest. Go for something like taco meat, cut up onions and peppers, and cheese on top, instead.

So many! Peppers, tomatoes, eggplants, courgettes, onions, mushrooms, cabbage leaves.... are at least some that I cook stuffed. What makes stuffed vegetables such an interesting choice is the ingredients which you can use, such as mince meat, rice, other vegetables, cheese, and any combination that you like.

Peppers, tomatoes, courgette and aubergines.
Scrape out the middle and put in food chopper with onion, mint, parsley, herbs, salt, pepper and little olive oil, chop up and add to the mixture one spoonful of rice for every vegetable, stuff veg and bake in a moderate over for about an hour (if you want put potatoes around the other veg. It is fantastic.

Peppers are good. My mum used to do stuffed marrow which was great. I think she did courgettes too. My friends like stuffed mushrooms. My favourite is stuffed tomatoes, but I think that's probably a fruit.

Let's not forget vine leaves and cabbage leaves.
To be absolutely correct, only potatoes and cabbage leaves are vegetables - the rest are, strictly speaking, fruits or obtained from fruit bushes (vine leaves).
Try stuffing fresh figs with feta cheese. Pop under the grill for a few minutes. An easy and alternative starter.

Peppers are great. Stuff them with anything you want, but I've found a combination of other veg, cheese and breadcrumbs gives a lovely effect (especially if the cheese is gooey and melted). Also, cheesey mash inside a green pepper is really indulgent but feels that little bit better because you're getting a veg with it!
Tomatoes are great to stuff as well, but I've found that they don't always hold together as well.

There are many vegetables that can be stuffed: Okra, eggplant, onions, mushrooms,tomatoes, peppers, chillies, lettuce, chard, cabbage, zucchini.
I make a delicious stuffed cabbage.Perfect fro the Fall/Winter weather. I'll be posting the recipe on my page soon.
