Veggie Burgers
Prep Time: 25 minutes Inactive Prep Time: 1 hour
Cook Time: 40 minutes
Yield: 6 servings
Burgers:
1 cup green lentils, picked through and rinsed thoroughly
1/4 cup pearl barley
1 tablespoon unsalted butter
1 medium onion, chopped
1 large clove garlic, minced
1 teaspoon finely chopped fresh ginger
1 1/2 teaspoons curry powder
3 tablespoons chopped fresh cilantro leaves
1 cup fresh bread crumbs
1 whole egg plus 1 egg white, lightly beaten
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
6 burger buns or pocket pitas
Toppings:
Lettuce, sliced cucumber, radish, and/or a squeeze of fresh lime juice
Or your favorite
Put the lentils and barley in a saucepan with cold water to cover by about 2 inches. Season with salt, and bring to a boil over high heat; reduce the heat and simmer, uncovered, until the lentils and barley tender, about 20 minutes. Drain excess liquid and put the beans and grain into a large bowl. Cool.
Meanwhile, melt the butter in skillet over medium heat and cook the onion, garlic, and ginger until the onion is tender, about 4 minutes. Stir in the curry powder and cook until aromatic, about 1 minute more. Cool slightly and then add to the lentils and barley.
Stir the cilantro, bread crumbs, and eggs into the lentil mixture, and season with 1 teaspoon salt and pepper, to taste. Puree 1 cup of the burger mix in a food processor until smooth. Return purree back to the bowl and mix well. Form mixture into 6 burgers (about 1/2 cup each). Place on a plate and refrigerate for 1 hour. Preheat oven to 400 degrees F.
Heat 1 tablespoon of the olive oil in a nonstick skillet over medium-high heat. Season burgers with salt and pepper and cook 3 burgers, turning once, until golden brown on both sides, about 5 minutes in all. Transfer the browned burgers to a baking sheet. Repeat with the remaining oil and burgers. Transfer burgers to the oven, and cook until firm, about 10 minutes.
Meanwhile lightly toast buns or pitas. Put the burgers on the buns, and top with your favorite toppings.

1 can kidney beans, drained but not rinsed
1 cup of rolled oats
1 cup water
1/2 small onion, minced
1/4 cup finely chopped mushrooms
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
pinch of cayenne pepper or paprika (more to taste)
11/2 tablespoons soy sauce
1 to 2 tablespoons olive oil
6 whole-wheat buns
Place beans in a food processor and run on low until beans are crumbly like ground meat. Transfer to a large mixing bowl and add the remaining ingredients, except the olive oil. Combine and let sit about 10 to 15 minutes, until all the water is absorbed. Mixture will be rather mushy.
To shape patties, scoop generously into a 1/2 cup measure and lay out on a piece of waxed paper. It should make six large patties. Slightly pat down each patty to shape, if necessary.
heat the oil in a frying pan over medium-high heat. Cook on both sides until golden brown.
Serve on whole-wheat buns with burger condiments of your choice, such as ketchup, mustard lettuce, red onion and sliced tomatoes. Makes six burgers.

Recipe Ingredients

1 cup white rice
1 cup black beans

Recipe Preparation
Whir grains one at a time in blender until coarsely chopped. mix well
and store in a covered container.
When you want a veggie burger scoop out needed amount <1 cup makes 4
good sized burgers> whir 1 cup at a time in blender until reasonably
fine.
Heat 1 cup of water for each cup of mix until boiling add seasonings
add to dry mixture and stir until liquid is absorbed.
Drop by large spoonsfull into nonstick fry pan it will
firm up as it cooks. Its gloppy to start with. That's ok. Turn when
brown on bottom. serve as pleases you.
For a more tender pancake like burger use a little more water.
beef, chicken, or ham flavored burgers. Use 2 TBS
taste> soup starter for each cup of water. Serve on buns with lettuce
tomatoe, onion, ketchup, mustard or whatever strikes your fancy. For
cheeseburgers use FF cheese.
Taco burgers add 1/2 pkt taco seasonings to each cup of water. serve
with salsa or stir fry to a chunky consistancy and make tacos
hawaiian burgers use pineapple juice in place of 1/2 the water add a
dash of soy sauce. Serve with pineapple rings.
sloppy joes use 1/2 c. sloppy joe mix for each cup of water stir fry
to chuncky consistancy. Serve on whole wheat buns.
sweet and sour burgers. Use soy sauce in place of 1/4 water. Serve
with sweet and sour sauce.

Veggie Burgers
2 tbsp olive oil
4 x Portobello mushrooms, sliced
1 cup of shiitake mushrooms, chopped
2 x onions, chopped
2 cloves of garlic, minced
1/2 cup brown rice
1/2 cup bulgar
2 cups of water
2 tbsp of soya sauce
1 x bay leaf
2 x eggs
1 block of firm tofu
2 tbsp of Miso paste
1 cup of breadcrumbs
Salt and pepper
Heat a saucepot over medium-high heat and add oil. When hot, add mushrooms, onions and garlic. Sauté until the mushrooms lose their moisture and onions begin to caramelize. Add rice, bulgar, water, soya sauce and bay leaf. Cover with a lid and cook until the grains have absorbed all the liquid. Let mixture cool.
Place mushroom and rice mixture into the bowl of a food processor. Add eggs, tofu, Miso paste and breadcrumbs and seasoning. Puree until smooth.
Form into patties and refrigerate until firm. Fry over medium high heat until golden and cooked through.
