3 Tofu Marinades, Pressing Tofu * RATING * 5 out of 5 1 reviews

Method :

* Pressing: Split the block lengthwise. lay several layers of paper towel on a flat surface; place the tofu cut side down on the towels, put another couple of layers of paper towel on top, cover with something flat and rigid
* (I use a cutting board) and place a weight on top (I use a gallon jug of brandy :-)
* I read somewhere that baking the tofu after pressing the water out and before marinating helps the tofu to absorb the marinade better. So, I cut up the tofu after pressing, then bake at 375 deg for 15 min. Then I put the tofu in the marinade, wait awhile, then stir fry or grill. Works great for me.
* let it sit for 45 minutes or longer; this presses out the excess water in the tofu, and makes it chewier and less likely to crumble. It can then be grilled or baked, or cut up for use in stir-fries. I usually marinate it after pressing. Here are a couple of marinades to get you started:
* 1) 1/2 cup light soy 1/2 cup dry sherry 2 tbs fresh grated ginger 2 cloves minced garlic
* 2. 1/2 cup fresh soy 1/2 cup lime juice 1 TBS ground cumin 1 TBS olive oil 2 serrano chiles, seeded and diced
* 3. 1 cup orange juice 3 tbs jamaican jerk sauce











Aged Tofu (Figi)

Ingredients :

2pkt10.5 oz. firm tofu
1/2cupFlour
Vegetable oil for frying
1/2cupWater
2ozSoy Or Tamari sauce
1tblSugar or honey
1/3tspBottled fish stock or
Vegetable stock
2tspFresh ginger root, grated
8xFresh scallions, chopped

Method :

* Wipe tofu dry with paper towels. Cut the tofu in each box in half, then cut each half into four equal portions. Flour each portion lightly. Heat vegetable oil to medium hot (350 to 375 degrees). Add the tofu, a few at a time. Fry until golden and remove to drain on paper towels. Prepare sauce by placing the water, soy or tamari sauce, sweetener and stock in a saucepan. Bring to a boil and mix well, making sure sugar (if using) is dissolved. To serve, place a small amount of the sauce on four warmed plates. Divide the tofu evenly among the plates, placing them on the sauce. Garnish with grated ginger and chopped scallions.


















Almond Tofu Stir Fry

Ingredients :

MARINADE
1/2cupsoy sauce
2tblpeanut butter
1/4tspgarlic powder
1tsponion powder
1lbWhite Wave tofu, cut in 1/2" cubes,
2tbloil
1xbell pepper
1/2tspginger powder
6xscallions
3stalkcelery
8ozwater chestnuts
2cupcold water
1/3cupsoy sauce
2 1/4tblcorn starch
1/2cuproasted almond slivers

Method :

* Add tofu, cut in 1/2" cubes to marinade, and marinate for 30 minutes.
* Chop and saute in oil until tender, bell pepper through water chestnuts.
* Blend together the cold water, soy sauce and corn starch for sauce.
* Add sauce to sauted veggies and simmer. Add tofu and marinade. Simmer Until thick. Stir in roasted almonds and serve immediately over noodles or rice.

Here is a recipe I enjoy (it is one I created myself)

Using a frying pan cook some sliced red onion in around 100ml red wine vinegar and a splash of olive oil on a medium heat until all the vinegar has evaporated.
Boil up some pasta while you do this.
Then add sliced mushroom, cherry tomato, a small amount of fresh chilli and tofu cubes. Allow these to fry for 5 mins or so.
Add the tofu and veg to the pasta and stir in a spoon of pesto.
Enjoy. I often eat this dish.

Mmm... red wine tofu pasta...

I too like tofu very much. I like to marinade it and then my hubby will grill it for me. I get Vegetarian Times and have tried lots of the recipes in it....here is a really good one.

I didn't have soy steak strips on hand so I just cut up some extra firm tofu and marinated it in some soy sauce for about 30 min.

cut tofu into half inch cubes and stir-fry. Cook each face until golden brown.

after a few times you will get the hang of it so you can then stick them in a stir-fry at the beginning when you put in the onion and other slow-cooking veggies.

so: onion-tofu-yellow-or-red-peppars-cabbage then garlic and ginger then orange juice then tomato puree then a little vinegar then soy sauce then eat.

I get lots of different tofus that have already been prepeared in different ways, but Ive seen tofu cookbooks around.

Also if you're gonna marrinade the tofu then freeze it first, let it defrost naturally and then squeeze all the water out.
Then its ready for some good marinading ;)

i love tofu too, have been veggie for 17 years and have eaten it for so long i don't understand when people hate it!!

i like the fresh stuff best that is set quite hard so you can slice it easily. serve cold topped with soy sauce and some spring onions and sesame seeds.

or add to veg broth with veggies and tofu for simple soup.

make egg drop soup with tofu, which is broth then you drop egg in it and whisk it around, then put in diced fresh tofu.

add to salad, like normal salad leaves with radish and cucumber and red onion and celery etc, add diced tofu and instead of olive oil on salad, put sesame oil and balsamic.

add to egg fried rice.

veg and tofu stir fry

or cover in bread crumbs and spices and fry it, serve with some steamed greens and oyster sauce.

the list is endless, enjoy

how about tofu with broccoli and peppers like red green and yellow or even orange and make a stir fry tofu stir fry and garlic and season of choice heat in olive oil if you like fish add some like shrimp or crab fresh the better add onions and you can put it over white rice or long grain and add teriaki sauce or soy for your flavoring or go with out its the best and healthy

One time my mom took tofu and cut it into strips then she marinated it in curry .Then took the tofu and pan fryed it .Next she put into a corn tortilla and put on all the rest you would put into a taco and it was absolutely delicious!And to tell you the truth I HATE tofu.It was that good.

Get any Indian, Thai, or Chinese cookbook and substitue Tofu for the beef, chicken, and lamb in almost any one of the recipees.... The tofu picks up the flavor of the sauces and has all the protein of the meats....

Use un-smoked tofu as a dessert.

Crumble & mix with sugar, cream & fresh berries.
