Wanted to vary my vegetarian diet a bit but ran out of ideas!

I love it with dried fruit. This recipe is awesome!

3/4 cup quinoa
2 teaspoons olive oil
3 scallions, thinly sliced
3 cloves garlic, minced
2 1/2 cups boiling water
3/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup dried cherries (1-1/2 ounces)
1/4 cup chopped pecans or walnuts (1 ounce)



1. Place quinoa in a colander and rinse under cold running water.
2. Drain well.
3. In large skillet, heat oil over medium heat.
4. Add scallions and garlic and cook, stirring frequently, for 2 minutes or until scallions are tender.
5. Stir in quinoa and cook 2 to 3 minutes or until lightly toasted.
6. Add boiling water, salt, and pepper.
7. Reduce to a simmer, cover, and cook 20 to 25 minutes or until quinoa is tender.
8. Stir in cherries and pecans.

I do a vegetable risotto with quinoa and tofu. The quinoa goes in the same pan as the veg and takes about 15-18 minutes to go soft. A friend cooks it by itself in water and serves it separately, but I like mine best.

I cook it just like rice, but with a vegi stock-no water. The stock gives it a richer more developed flavor. I just recently tried the "black quinoa" and it was super cooked this way.

2 cobs of water to 1 cup of quinoa and then cook it like rise, bring it to the boil and then let it simmer until cooked. You can usually tell when it's done as the colour of the grain is darker.

I like it with flat leaf parsley finelly chopped, sunblushed tomatoes cut into strips, lemon juice, fresh tomatoes, olives, some olive oul and balsamic vinegar.

I'm into easy cooking. Don't want to spend longer cooking it than it takes to eat it!
Cook in a rice cooker with dehydrated onion and granulated garlic and any other seasonings you like. Mix with feta cheese and slivered scallions (green onions) and then stuff into bell peppers. Pour your favorite marinara sauce on top and bake, uncovered, at 325 deg for 1-1/2 hours.

I'm a vegetarian and I didn't like it although I like most grains and seeds.

The directions are on the back of the box. Use it as you would use rice.
