I'm just looking for ideas...I'm engaged and have never really cooked for anyone else on a regular basis. I've made taco salad and cooked taco meat for my DF, but had enough other toppings like black beans and corn so that I could enjoy the meal as well. My fiance' won't require meat with every meal, but I know he would appreciate me cooking with meat at least occassionally. I'm not opposed to it, but don't really know how I'll go about doing it.

it is quite simple these days with the veariety of meat substitues available!! Im in the same boat my wife eats meat whilst im a vego. What i do if she wants meat in a meal is just cook a certain meal up say spagetti bolonaise in 2 frying pans. 1 with the mince 1 with the tvp or what ever substitute you desire! So you are both eating the same meal. He is happy with his meat and you only have 1 extra frying pan to add to the washing up!!
its all about thinking practicully. I love to cook so it all falls into place for me. if you dont like to cook maybe you can get him to cook as well!! good luck!!!

Planning is the key.
Basic Meat dish which he eats & I don't... but in our house the Veggies dished are huge, This only works if the guy eats properly. I make things ahead too if I make him meatloaf it's enough for 2 or 3 meals. I divide it up & freeze, same if I roast a chicken etc.
We have a salad & fresh veggies almost every night,

My ex used to have meat for every meal. I would cook spagetti and do a vegan sauce and he would do his own meat sauce etc. If I was having rice and stir fry he would have rice with chicken and if I made a roast he would do meat for him and I would just cook vegetables for me and the kids.
As a vegetarian I'm surprised you are willing to cook meat for him, its something I have never done.

I'm not married to a vegetarian but my close friend is one. We eat together a lot. Here are 2 I make for us a lot- I can add a little meat for me and leave the rest without.

Spaghetti Squash Bowls:
1 spaghetti squash
1 medium onion
1 green pepper
1 clove garlic
4 medium tomatoes
2 TBS Extra Virgin Olive Oil
salt & pepper
1/4 tsp each oregano, basil, fennel seed
2 TBS butter
1/4 c parmesan
(brown 1/2 lb ground beef in skillet to add in to his portion of the tomato mixture when cooking is complete-or you can use diced cooked chicken instead of meat)

Pierce squash in several places for steam. Place on paper towel and microwave 18-23 min. turning after 8 min. until tender. Let stand uncovered @ 10 min. Cook onion, green pepper,and garlic in oil @5 min. Stir in tomatoes, s&p, oregano, basil and fennel. Simmer uncovered @ 5 min. Cut squash in half and discard seeds. Toss the fibers with butter and parmesan. Spoon tomato mixture over squash and serve inside squash shell.

Kaesespaetzle:
1 lb noodles
1/2 lb grated swiss
1/2 lb ham, cubed (can substitue with Lil" Smokies [mini sausages])
1 onion, sliced
2-3 TBS butter

Cook noodles and drain well. Place a layer in a buttered casserole dish. Top with layer of cheese. Top that with a layer of ham (you can leave one half of it without ham if you want), then repeat layers-noodles, cheese, ham and so on. Brown onions in butter and pour over top. Heat in 400 oven just until cheese is melted through. Serve :)

Stir fry veggies over brown rice
Veggie burgers
Vegetarian Paella
Homemade pizza (made with rennet free cheese)
Grilled marinated veggie wedges
Vegetarian cottage pie

nope, we're both vegetarians and both became one at the same time for the same reason...cruelty towards animals and the health benefits of being vegetarian. There is no way I'd be with a flesh eater just knowing that their eating filth..no way

maybe you should buy the meat instead of cooking it and just cook your vegetarian dishes as usual
