You can do a great spaghetti sauce and basic white or whole wheat bread. That is real food, but vegan. Also try www.allrecipes.com. I believe they have a vegan section. Also try www.cooks.com and type in what you are looking for. Also look into Indian dishes. Many of them can be adapted or are straight out vegan.

Vegweb has lists of recipes. Take a look there. I generally like some sort of beans and rice but since its a weekend with multiple meals, you're going to want some choices and varieties.
Recipezaar also has a nice vegan section.
If you want some similar-to-meat type meals, you can usually find some at grocery stores, like veggie hotdogs or coldcuts, and tvp (Texturized Vegetable Protein) is often used instead of ground beef.

CURRIED GRILLED TOFU CUTLETS
2 lbs Firm Tofu patted dry
2 cups curry and herb marinade
Cut each block of tofu in half lengthwise. Turn each half cut-side down on the board, and cut thru the outer edge of the block of tofu 3 times to yield 4 tofu cutlets from each half. This means that each block of tofu will yield 8 tofu cutlets. On a large cookie sheet, place a clean, lint-free towel, or a layer of unbleached paper towels, then all of the tofu cutlets in a single layer, followed by another layer of toweling, and finally place another large cookie sheet on top. Place several large cans or something very heavy on top of the cookie sheet and leave tofu to sit for 1 hour. It makes the tofu much firmer.
Cover the bottom of a large casserole dish with a third of the marinade, place the pressed tofu cutlets on top, and pour the remaining marinade over the top. cover, place in the refrigerator, and leave to marinate for 1 hour. Place the cutlets on a hot grill and cook for 7-8 minutes per side or until lightly browned around the edges. Transfer the grilled cutlets to a platter and serve 2 cutlets per person.
CURRY AND HERB MARINADE
3 cups orange or yellow pepper, destemmed,deseeded,and diced
3/4 cup white wine or white grape juice
1/3 cup shallot, finely chopped
1/3 cup lemon juice 1/3 cup olive oil
3 T. Bragg Liquid Aminos or tamari
4 tsp. curry powder
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup freshly chopped basil
1/3 cup freshly chopped parsley
In a blender, place all of the ingredients, except the chopped basil and parsley, and blen for 1-2 minutes or until thoroughly combined. Add the herbs and blend an additional 10 seconds. Transfer marinade to a bowl. Use as a marinade for vegetables or soy products.
Yield 3 cups

Theres alot of great vegan meats out there, One that comes in the freezer isle... I think it was like.. Bronson? (sorry, i just know its in a red box) and yeah, alot of great vegan meats that are 100% meat/dairy/fish free so it should be good, and throw in some onions and its a good meal. Just because they're vegan doesnt mean your options are limited to just vegatables. Look for thigns with tofu substitute, and you can create something delicious!

Despite being well intentioned Vegans don't eat dairy so all those pizzas and eggplant parms will have to be made with soy cheese which doesn't really melt and is pretty nasty, you need to be a little experienced to cook with it! Just thought I'd warn you!

you can cook tofu which ismnade from soy beans and is textured like meat. You can cook rice or you can have a salad and a very nice "Stouffers" brand vegetarian laszana (local food store in the frozen food dept.) and garlic bread hot from the oven. I think he/she would be so please they would even ask you for the recipe :)

One very easy meal is to buy a can of diced tomatoes and boil some elbow macaroni....heat the tomatoes and pour them over the macaroni......taste pretty good...salt if desired..

Depends really on her taste of food, you can always go on salads or buy some chinese tofu and stir fry them with mushrooms, brocolli, baby corn, onions, garlic, soy sauce, salt and pepper and szechuan chili garlic sauce... really good...
