Careful you are appealing to the brainiacs here. The mind can tend to work overtime on this one. Well, as far as the food groups go, it would dash what we know about the inherent properties of chlorophyll being a part of this vegetable, would probably have to say then that it did not have the chemical compounds known to replenish and nourish in the same way that other green vegetables or 'foods' do......now, green food does not include mold, but see how this can be misconstrued?
I believe your point to be well taken in its levity and enter another idea......the phallic symbol. I think that this is what people will ultimately be thinking of and I have no problems looking at this question from the standpoint of nutrition, however the concept in the creative process of visualization is rather phallic. Would I eat them? I will let you know when they turn pink and have red dye number 5 out of them...ok? Know to be a carcinogen and not really your question at all but just as off the wall.......thanks, this was fun.
Happy now?

We would still be eating them as the taste would remain the same .Moreover we would not be knowing anything about the green cucumbers and even if we did then we would be making colorful salads, sandwiches etc.and adding colour to our food just like the red, yellow and green bell peppers.

it would be a pink cucumber!
Probably a hybrid from your garden - but not sure it's possible-

You would either eat them, or not, but, they would still taste the same, and they are good in oil and vinegar or just buttermilk!

I wish you well..
