I like homemade thick creamy soup in Winter like Pumpkin soup, carrot soup, mushroom soup, etc.
<<<<< Pumpkin Soup >>>>> Serves 4
20g butter
1 medium onion (150g), chopped finely
2 gloves of garlic, chopped
750g piece butternut pumpkin, peeled, seeded, chopped
300g carrot, peeled, chopped
375ml (3.5 cup) vegetables stock
80g sour cream
salt & pepper to taste
1 tablespoon fresh parsley, chopped finely (garnish)
1) Melt butter in large saucepan, add onion & garlic, stir frying until onion is soft.
2) Boil sock in a pot over medium heat, add pumpkin & carrot, bring to boil, reduce heat to low, simmer for 30 minutes (uncovered).
3) Cool pumpkin mixture before blending or processing in batches until smooth. Return to pot, bring to boil, melt sour cream in the soup, add salt & pepper to taste. Serve on bowl and garnish parsley on top.

Yum yes! I have a homemade potato soup that my family loves.
I just saute some onions and garlic, then add diced potatoes, carots until they are golden. Add cerely, and cook a bit more. Then had enough broth to cover them all up. Cook until the veggies are tender and mash them with a potato masher - this way you make the soup thick and hearty. You can also add a bit of heavy cream at the end.
It's cold here in the Northeast!

Potato-Leek-Onion Soup
Serves 8
2 medium onions, chopped
3 medium leeks (white part only), chopped
1 clove garlic
2 to 3 tablespoons of vegetable oil
5 cups water
6 medium potatoes*, cut into small or medium pieces
4 celery stalks, sliced
1 stalk fresh lemongrass (or dried) to taste
cayenne, salt, and dill or marjoram, to taste
1 cup soy or rice milk
1 tablespoon lemon juice
* For variety, use 3 russet or Idaho potatoes and 3 sweet potatoes
Sauté the onions, leeks, and garlic in vegetable oil in a large pot until soft. Then
add the water, potatoes, celery, lemongrass, cayenne, salt, and dill.
Bring to a boil, reduce the heat, and simmer for 30-45 minutes until the potatoes are tender. Cover the pot for a thin broth or leave it uncovered for a thicker soup.
Once the potatoes are soft, remove the stalk of lemongrass (if using fresh) and purée about half the soup in a blender or food processor, then mix it back into the pot.
Add the lemon juice to the soy or rice milk and let it sit for 5 minutes. Then add it to the soup. Serve warm.

I totally agree - it's getting cold here fast and so recently enjoyed a nice tomato soup with crackers. Next week I am going to make a red kidney bean soup (a specialty from my country) - it's SO good and filling and hardly any calories.

Vegetables soup. Just leave the meat out etc. And eat it. Im vegetarian and i love it. Or vegetarian tomato soup.

Sure does, I'm making some this weekend. Here is how I make it.
1 large can V8 juice
2 cans Swanson vegetable broth
1/2 lb or so carrot cut in bite size pieces
3 or 4 stocks celery cut in bite size pieces
bag of frozen mixed vegetable
1/4 cup barley
Season to taste with salt & pepper.
Simmer until vegetables are tender.
You can add a potato or some onion if you like.

Yes. I'm making a pot of bean soup today.
I use great northern beans, carrots, potatoes, onions, salt & pepper. (I also use ham in it, but that's not veggie... :) )
I let the beans soak in cold water for 6-8 hours (or overnight). Then I rinse them, put them in fresh water. I put them on low heat and cook for several hours, then add the cut up potatoes, carrots and onion and seasoning. I let it cook until the carrots are tender (those take the longest).
Then I make a nice pan of cornbread to go with...

It's never cold out where I live but, I like, enjoy a tomato soup with local Florida tomatoes puree style really hot with a slice of toasted Cuban bread

Umm...A great vegetarian soup is the mushrom. Is really yummie. It will make you warm when is cold outside. Jeje. Other ones are brocoli cheese soup. It tastes really good with bread and they make the best one in Pizzeria Uno.
