Run Down (Salt Catfish and Tomatoes)

Ingredients :

1lbMackerel fillets, or shad
1/4cupLime juice
3cupMilk, coconut
1lrgOnions, chopped fine
2xGarlic cloves
1tblPepper, hot, red, chopped fine
1lbTomatoes, peeled, chopped
Salt
Pepper, ground
1/4tspThyme
1tblVinegar, malt

Method :

* Pour the lime juice over the fish and set aside. Cook the coconut milk in a frying pan until it is oily. Add onion and garlic and cook until onion is tender. Add the hot pepper, tomatoes, salt, papper, thyme and vinegar. Stir and cook very gently for 10 minutes. Drain fish, add, and cook until the fish is tender, about 10 minutes. Serve hot with boiled bananas. Run down can also be used as a stuffing for breadfruit.
* Salt codfish or rock lobster tails can be used instead of shad or mackerel.

3cupCubed, peeled butternut squash ( 1/2 inch pieces)
1cupCubed carrot
4cupVegetable Stock
1/3cupFresh lime juice
1tblMinced, fresh thyme
1tblGrated, peeled gingerroot
1/4tspSalt
1/4tspPepper
1xFresh Scotch bonnet or
habanero pepper -or
2xSerrano chilies, halved and seeded
3cupHalved fresh mushrooms
VEGETABLE STOCK
11xFresh thyme sprigs
5cupWater
4cupCoarsely chopped chayote (about 1 pound)
1 1/2cupSliced celery
1 1/4cupCoarsely chopped onion
3tblShredded coconut
10xBlack peppercorns
10whlallspice
8xCloves garlic, halved
1xBay leaf

Method :

* Another from the 9/94 Cooking Light Jamaican feature.
* Heat vegetable oil in a DUTCH OVEN :) aver medium high heat. Add onion and garlic; saute' 5 minutes. Add Vegetable Stock and next five ingredients; bring to a boil. Reduce heat, cover, simmer for 20 minutes. Add Scotch bonnet pepper; cover and simmer 10 minutes. Add mushrooms; cover and simmer 20 minutes. Discard Scotch bonnet.
* Yield: 10 servings (serving size 1 cup)
* Vegetable Stock: Remove leaves from thyme sprigs, set the leaves aside for Vegetable Run Down. Combine thyme stems and the remaining ingredients in a large DUTCH OVEN, and bring to a boil. Reduce heat, and simmer, uncovered, over medium low heat 30 minutes. Strain the stock through a sieve into a large bowl; discard the solids.
* Yield:4 cups















Tofu Jamaican Run Down Stew

Ingredients :

1cupOnions, diced
2cupFirm tofu, diced
1/2cup,water
1/2cupRed bell pepper, diced
1/2cupCarrots, peeled and grated
2tspGarlic, minced
1/2tspSea salt
1/4tspBlack pepper
1 1/2cupRun Down Sauce (see recipe)
1cupChayote squash, diced

Method :

* Put all of the ingredients, including the sauce, but not the squash, in a saucepan. Simmer for about 15 minutes. Then add the squash and continue cooking until the vegetables are tender-crisp. Serve over rice.
