Ginger snaps -- the authentic, old-fashioned kind -- were supposed to be hard. What you do is dunk them in coffee or milk and they get mushy. If you like the taste and not the texture of ginger snaps, try making your own from a gingerbread cookie recipe. Those turn out nice and soft and have a good ginger flavor.
