I would say that you get some spices imported from SA and then make you own as it is very easy. The hardest is to keep the cats away ask me I have them in the yard most of the time. Mr D how do you make biltong with a oven when it is air dried meat? I have about 30kg hanging outside the back. add* Cakes it is freezing in Joburg this time of year and my biltong is doing fine and from hanging it should be 10-14 days before I can eat it. add* Fillet and back strips are you best for making biltong.

What more can I add. I've never read an essay on biltong before.
Best supermarket to buy it from = Pick & Pay (SA I'm afraid) although Woolworths (SA) is OK, but it's best made by your Auntie!
Storage -
'wet biltong' (yes I know it's an odd concept) = in the fridge
'dry biltong' = in a brown paper bag, in a cool & dry pantry

you can either get it vaccum packed, which will keep it well for ages. You local butcher should be able to do this. Or hang it somewhere dry. The important thing is that it doesn't get moist or it will start to rot, so try and keep an air flow round it. I just hang mine on a meat hook on a shelf in the kitchen and its good to eat for ages.

I'd put it in freezer bags, suck out the air, seal the bags and freeze it.
It should keep at least a week in tupperware. Put some kitchen paper in to absorb moisture.

its stays long in dry places but due to the weather condition of this place i suggest you put them in a plastic and suck all the air out of the plastic if you cant afford that you can always freeze it. (it tastes really nice when shallow fried)
