My friend is hosting a surprise birthday party for her 11 year old sister. The theme is Luau. We've decided on a Volcano Cake or a Pineapple Upside Down Cake, but need some appetizer and main dish recipes.

My ex-husband lived in Maui for 7 years and there were several dishes he introduced me to.

A few I'd recommend are Poke and Lomi Lomi (these have raw tuna and raw salmon). Of course, Poi is a big thing over there, I never cared for it myself... but you can't have a Luau without some! I saw an answer with Hawaiian Spareribs, they are very tasty. Another suggestion would be Shoyu Chicken (basically chicken cooked in soy sauce and other things). Teriyaki is big over there.

If you really want to go "local" with the dishes, something with Spam would be good. This is one my ex particularly liked. It's a little unorthodox, but believe me, Spam is a BIG seller on the islands.

SPAM MUSUBI
5 cups Cooked Sushi Rice (Room Temperature)
12 oz SPAM
4 Tblsp Mirin (Japanese cooking wine)
5 sheets Nori (seaweed) - cut in half lengthwise
6 Tblsp Soy Sauce
4 Tblsp Sugar
Furikake (a Japanese flavoring mix)

* Open SPAM can and remove SPAM, set aside. Open both ends of can and wash thoroughly.

* Cut SPAM into 10 slices and fry until crispy. Let drain.

* In another pan, combine Soy Sauce, Mirin, and Sugar. Bring to boil over medium-high heat and then reduce to low.

* Add the SPAM slices to the pan and make sure they are coated in the sauce. Simmer on low until sauce thickens and then remove SPAM.

* Lay the sheet of Nori on a clean surface. Place the clean SPAM can on the lower third of the Nori. Fill the mold (the SPAM can) with rice and press flat until the rice is 3/4" high.

* Sprinkle rice with Furikaki and the top with a piece of the SPAM.

* Remove the mold and place it in a bowl of water to keep it clean.

* Fold the Nori over the SPAM and Sushi Rice and roll until it is completely wrapped. Moisten the end of the Nori to seal.

* Repeat this for the rest of the SPAM slices.

1 pint
Fruit Punch
Sherbert Ice Cream
Ginger Ale

Mix the fruit punch and ginger ale together. Add balls of sherbert ice cream and serve with a fruit garnish or drinking straw.

Poke


1 lb
2 cups
1 Tbsp
Yellow Fin Tuna (raw)
Limu (seaweed)
Hawaiian Salt

Carefully select the fish because this dish is not cooked. Slice the fish into cubes around an inch to 1/2 an inch. Wash the limu and cut into 1 inch pieces. Add the Hawaiian salt and mix lightly. Refrigerate until serving.

5 spareribs
4 cloves of garlic
1 ginger root
1 cup sugar
1 cup catsup
1 cup soy sauce
1/3 cup of fish or oyster sauce
1 tsp salt
in a sauce pan bring the ginger, ribs, garlic and salt to a simmer until ribs are tender, drain, this takes 1-1 1/2 hours
prepare the marinade with the sugar, soy sauce and oyster or fish sauce in a separate pan.marinate the ribs overnight. the next day cook on grill and enjoy.

main dish
Maui Maui with Teriyaki sauce marinate
4 pieces of Maui Maui
1 clove of garlic
1 tablespoon of teriyaki sauce
2 tablespoons of lemon juice
1 tsp of honey
1 tablespoons of sesame seeds
cook and mix to your taste and liking
