I've recently been introduced to quinoa and really like it. Only thing is that other than adding peas, tofu and soya sauce Im not sure what else to do with it!

Im a lacto-ovo vegetarian (meaning I still eat dairy and eggs).

Curried Quinoa Recipe
1 Cup Quinoa
1½ Tbsp. Vegetable Oil
½ Onion Diced (about 4 or 5 ozs.)
1 Tsp. Grated Fresh Ginger Root
½ Fresh Green Chile (Finely Chopped)
1 Heaping Tsp. Turmeric
1 Heaping Tsp. Coriander
¼ Tsp. Ground Cinnamon
½ Tsp. Salt
1¾ Cups Water
½ Cup Fresh or Frozen Peas
Rinse quinoa with cold water. Use a fine mesh filter or coffee filter.
Place oil and diced onions in a heavy saucepan. Saute the onions on medium high heat for four to five minutes.
Add the ginger root, chile, and quinoa. Cook for one minute stirring constantly.
A fine, white spiral appears around the grain as it cooks.
Stir in the turmeric, coriander, cinnamon, and salt. Cook for one minute stirring constantly.
Add the water and bring it to a boil. Cover, reduce heat, and simmer for 15 minutes.
Stir in peas. Cover and cook for four or five minutes or until peas are tender and all the water has been absorbed. Fluff with a fork before serving.

Quinoa Vegetarian Stew
½ Cup Quinoa
1 Cup Water
2 Garlic Cloves
2 Tbsp. Vegetable Oil
1 Celery Stalk (Chopped)
1 Carrot (Cut on the diagonal into ¼ inch-thick pieces)
1 Bell Pepper (Cut into 1 inch peices)
1 Cup Cubed Zucchini
2 Cups undrained chopped fresh or canned tomatoes
1 Cup Water or Vegetable Stock
2 Tsp. Cumin
½ Tsp. Chili Powder
1 Tsp. Coriander
Pinch of Cayenne (or more to taste)
2 Tsp. Fresh Oregano (OR) 1 Tsp. Dried Oregano
Chopped Fresh Cilantro (Optional)
Grated Cheddar (OR) Monterey Jack Cheese
Rinse quinoa well with cold water. Use a fine mesh filter or coffee filter.
Place rinsed quinoa in pot with water and cook covered on medium-low heat for about 15 minutes until soft.
While the quinoa is cooking place the onions, garlic and vegetable oil in covered soup pot and suate on medium heat for 5 minuts
And celery and carrots to the soup pot and cook an additional 5 minutes stirring often
Add the bell pepper, zucchini, tomatoes, and one cup water or vegetable stock to soup pot. Stir in cumin, chili powder, coriander, cayenne and oregano to soup pot simmer covered for 10 to 15 minutes until vegetables are tender.
Stir in cooked quinoa and salt to taste.

Quinoa with sun-dried tomatoes

1 c quinoa
1 tsp butter
8 sun-dried tomatoes (not oil-packed),diced
2 shallots, minced
1 clove garlic,minced
2c water
pinch of cayenne pepper ,
2Tbsp chopped fresh parsley ,
salt & freshly ground black pepper

Place quinoa in a fine-meshed sieve and rinse under warm running water for
1 min. Set aside.
Heat butter in a heavy, med. saucepan over med. heat. Add tomatoes,
shallots and garlic and saute for 3-5 mins, or till shallots are softened.
Add stock or water and bring to a boil. Stir quinoa and cayenne, return
to a boil, then reduce heat to low and simmer, covered, for about 30 mins,
or until liquid is absorbed. Let sit for 5 mins, and fluff grains with a
fork to separate. Stir in fresh parsley and season with salt and pepper.
Serves : 4

Quinoa en Salpicon

2 c Raw quinoa
8 c ;Water
1 c Peeled, seeded cucumber diced
1 c Seeded and diced tomato
1/2 c Finely sliced scallions both green & white parts
1/3 c Chopped fresh Italian parsley
1/3 c Chopped fresh mint leaves
VINAIGRETTE

1/4 c Fresh lime juice
1/4 ts Ground white pepper
1 Fresh chile; seeded & minced
1 ts Coarse salt
1/2 c Olive oil

Rinse quinoa under running water and drain. Place the quinoa and water in a large saucepan, cover, and bring to a boil over high heat; this should take about 5 minutes. Remove the cover and lower the heat; simmer 10 minutes longer. Drain the quinoa and cool.
While the quinoa is cooking, make the vinaigrette. In a bowl, whisk together the lime juice, pepper, chile and salt. Gradually add olive oil, stirring constantly. Set aside.
When the grain has cooled, assemble the salad. In a bowl, place the quinoa with the cucumber, tomato, scallions, parsley and mint. Toss to mix the ingredients, then add the vinaigrette and toss thoroughly.
Season to taste with salt and white pepper.
Yield: 6 to 8 servings.

In the event it's a fruit they have seeds, otherwise it's a vegetable. And vegetables are usually grown in the ground while fruits are grown in trees.

Use it as you would use rice. Make a pilaf or serve stir fry veggies over it are some ideas.
