does anyone have any good vegetarian sandwich recipes that don't require cooking? tired of bread, butter, cheese. can't eat raw vegetables and greens so anything without them would be great.

A friend of mine used to call me everytime her mom was making this- it was my favorite!! Broccoli slaw (basically shredded broccoli and carrots), stir in walnuts, raisins, and moisten with poppyseed dressing. Stuff into a pita... If that's too many raw veggies to digest, try making several portabella caps over the weekend, so you'll have them throughout the week. Clean them, place them in a pan, drizzle with balsamic vinegarette, and bake until tender. Put on sandwiches with roasted bell peppers, onions, mozzerella- whatever you're into...

Cut Onions, Green Bell Peppers and tomatoes into round slices. Apply butter on one side of the bread and put tomatoes and onion slices, also add cut cilantro and some cut green chilllies, sprinkle some salt and pepper. Then apply butter to one more slice and cover the other bread slice with vegetables with this slice. Both buttered slice should face inside so that butter can cook the vegatables inside. Sprinkle some salt before covering the slices. Put it in grilled sandwich maker and eat it. It smellls yummy with cilantro and green chillies. Eat it with tomato ketchup.

Parmesan-Crusted Vegetarian Sandwiches:

6 tablespoons unsalted butter, softened
1/4 cup freshly grated Parmesan cheese
Salt and freshly ground pepper
8 thick slices of firm white or oatmeal bread
1 tablespoon plus 2 teaspoons mayonnaise
1 tablespoon plus 1 teaspoon Dijon mustard
2 ripe avocados
2 tablespoons fresh lime juice
12 thin tomato slices
4 thin red onion slices
2 cups alfalfa sprouts

1. In a small bowl, blend the butter with the Parmesan and season with salt and pepper. Spread 1 side of each bread slice with the Parmesan butter. In another small bowl, blend the mayonnaise with the mustard. Halve and pit the avocados and thinly slice them lengthwise. Sprinkle the slices with the lime juice.

2. Put 2 to 3 slices of bread, buttered side down, in a large skillet set over moderate heat. Cook until the bottoms are crisp and deep brown, about 3 minutes. Remove from the pan and repeat with the remaining bread.

3. Put 4 of the cheese toasts on a work surface, browned side down. Arrange an avocado half and 3 tomato slices on each toast and season with salt and pepper. Top each with 1 onion slice, 1 tablespoon of the mustard-mayonnaise and 1/2 cup of alfalfa sprouts. Top with the remaining cheese toasts, browned side up.

Yield: MAKES 4 SANDWICHES

Well, if you can't digest raw veggies (which you could work on), why not try some cooked veggies sauted with some cumin (zuchinni and eggplant) inside a pitta with a little hummus?
Oh and did you try hemp protein powder? It's great mixed either with a bit of oil or some honey to make a spread.

You can't eat raw veggies and greens...why not? (does this include salad stuff too, like lettuce and tomatoes etc?)

You could try a tasty Houmous sandwich, maybe with some olives in it (with salad if ya can)

Or, maybe a yummy sandwich with Brie/Camembert and grapes.
Or, avocado with either cream cheese or mayo, sprinkled with some sunflower seeds. Maybe guacamole and cream cheese!
Or, maybe make up some bruschetta mix, so you can grab it from the fridge when you fancy a snack. You can easily find bruschetta recipes if you look for them ;-)

I don't know where you live, but here in the UK, you can buy tasty veggie pate's and spreads, like wild mushroom, or roasted pepper.

Try roasting some red peppers, portobello mushroom and some onions.. let them cool... slice a ciabatta roll open spread mayonaise on.. add roased veg and a slice of cheese, spread some nice mustard on top.. eh voila... unfortunately it requires cooking as you can't eat raw vegetables..

i'm a veggie too. to keep things interesting i make my own bread, french,
potato, whole wheat with nuts etc. if you can get your hands on a bread
maker it is super easy. otherwise find a good bakery and buy several kinds
of bread and freeze and variety of each in freezer bags. condiments can
also make a difference. there are lots of different kinds of mustards, mayo
hot sauces, chutneys, etc. experiment. you can eat veggie and still make
it fun. if you could add feta cheese to your diet you would be amazed how
much flavour a little adds to your sandwiches. good luck.

These are standards for my family; I'm putting the raw veggies for other people, but you could leave that part off

1. Peanut (or other kinds of nuts) butter, potatoe chips, dill pickles, mayonaise

2. Chopped black olives on mayonaise

3. avacado, sprouts, onions slices, lettuce or fresh spinach, mayo

4. shredded carrots (you could do cooked), mayo, relish-- mixed together

5. cheese with apple slices, melted in the microwave

6. tofu salad, mayo

7. barbecued tofu, spinach leaves, mayo

8. pan-fried tofu, spinach leaves, mayo, catsup, mustard

9. green olives chopped, with mayo & pimentos

10. sliced, canned, roasted peppers, slice of tofu, sprouts,
mayo

11. pimento cheese

12. humus, mayo, sliced onions

13. any leftover cooked vegetable drained, sliced onions, toasted bread, lettuce or spinach, mayo

Try putting shredded cheese on a tortilla, then melting it in the microwave, then spreading peanut butter on top. Roll it up, and enjoy! Sounds strange- but tastes heavenly. Trust me.
