Speak from your heart, with your own writing style. Afterall it's a complimentary letter, a personal letter; there should be no format/structure like a formal business letter. Share your experience, why you enjoyed the services/products and for them to know that you appreciate and to keep up the good work. It's a good thing you are doing - not everyone writes appreciation letters anymore; all we know is to write in when we have complaints :-)

Just write. You were there on on *blah* (or that you go twice a week, whatever), and had the best dining experience. They're your favorite restaurant. You love the *foo* dish/plate, the service was excellent and expedient. (If you can think of a certain server's name, that's good!) You loved the ambience and decor. And that you will definitely be returning. Just say whatever you're feeling about it!
