CURRY GOAT

2 lbs. of chopped goat
2 med. sized onions
2 sm. tomatoes
2 tsp. curry
Dash of accent
1 tsp. brown sugar
1/2 tsp. black pepper
Dash of red pimento
3 tsp. onion powder
Dash of garlic powder
3 sprigs of scallions
Dash of paprika
1/4 stick butter
Wash and strip goat meat removing all fat. Chop meat into medium sized cuts. Chop onions and tomatoes. Saute over medium flame. Put curry over meat. Put to settle for 1 to 2 hours. Put seasoned meat in a medium sized skillet over a medium flame. Allow to simmer. meat will produce its own water. When meat is tender, enhance flavor with accent, paprika and pimento. Allow to simmer. Put brown sugar and continue to simmer. Put black pepper to taste. Other herbs can be added to taste as you wish.

BUTTERSCOTCH YAMS

6 medium yams
1 cup firmly packed light brown sugar
1/2 cup dark corn syrup
1/4 cup heavy cream
3 tablespoons butter
1/2 teaspoon salt
miniature marshmallows, optional
Boil, peel and halve yams. Put yams in single layer dish & bake @ 350 F for 15 minutes.
While the yams are baking:
In heavy 2 quart saucepan, stir together sugar, corn syrup, cream, butter, & salt. Stir constantly, bringing to a boil over medium heat.
Boil 5 minutes. Pour over yams and bake for 15 additional minutes, occasionally basting with juice from pan. Sprinkle with miniature marshmallows if desired. Makes 6 - 8 servings.

Cook the curried goat almost fully, add the yams, are they the yellow, ***** or sweet potato variety, none the less, cut them about 1X1 inch pieces, they will need to cook for 20-25 minutes.
I find when I do this, you need to reseason the stew at the end, as they like regular potatos remove salt, and quick taste before serving is recommended.

Not sure if you want them in the same recipe, you'd add the yams to this recipe (below link) cleaned and cubed the last 30 minutes of cooking. Personally I'd try to make the curried goat and serve it with fried yams!
