Not yellow, but kinda orangy color. This happened to my brother-in-law...He used to eat lots of carrots, no he eats them in moderation. But if the whites of your eyes are turning yellow,or your skin--have your liver checked for scirrosis, the yellowing is called "jaundiced".

There are 2 main sources of Vitamin A, vegetable sources (carotenes) in foods and animal sources (retinol). Animal sources are about six times more potent than vegetable sources and can be toxic if taken in excess.
Ecess Vitamin A through food source can be excreted through the skin. That is why the skin turns organge (in the case of carrots as the food source). A person will also notice that their clothes and bed sheets may turn Orange too. It takes about 10-15 time the RDA to make this happen.
Keep in mind that Vitamin A (and some other type of vitamins ) are a Fat Soluable Vitamin... You need to have Fat with it for your body to break it down and absorb it. This is why it is important to eat balanced meals from multiple food groups at the same meal.

They honestly can make your skin orangey - from the carotene. It happened to a friend of my older sister - a woman in her 40s, who was on a diet and just kept chowing down on carrots all the time. Just think what happens to your hands sometimes when you are peeling and cutting a lot of carrots, how orange your hands get. Imagine if that happened from the inside out!

Children fed a large quantity of carrots get carrotonemia and turn orangish-yellow. Adults would have to eat a lot.

Excessive vitamin A is stored in the body (and not peed out) and can cause yellowing of the skin. This is most evident in small children and toddlers whose mamas "force-feed" them at least one yellow or orange vegetable a day. It takes a lot more for adults to get yellowish. Consuming a yellow/orange veggie every other or every third day is ample.
(Unless you are taking tanning tablets. They are merely vitamin A and beta carotene, and discolor the skin in that manner, attempting to duplicate a sun tan.)
The only remedy is to back down on the yellow/orange veggies and allow your body time to use up what's already stored.

Definately NOT. There was a reality show on TV recently in Australia, (I forget the name), and he ate about 3 kilos of carrots a day over a week with no noticable differences even to his eyesight.

Yellow tint to your skin, eyes and teeth are signs of either liver problems or scurvy (Lack of vitamin C). You really need to see a doctor about that. I know that you are aganst eating animals, but you have to realize that you are robbing yourself of essential nutrients and minerals by doing so. Your iron levels are probably also very low. That is not good, get a check up.

I've heard of babies turning orange (I don't know how drastic the color change is) if they eat too much carrots.

I don't know about adults, but consuming large quanities of beta-carotene containing vegetable can turn a baby yellow!
