The Hare Krishna sect have a wonderful vegetarian cookbook and they give it away free. I think it's called The Higher Taste. You should be able to find some HK people in any major city.

You could also try this site: www.savingdinner.com. They have emails that you can get each week with 6 recipes and a shopping list, they are written by a nutritionist and if you use the serving suggestions it is a perfectly balanced meal. I haven't tried the vegetarian one but I have her book which has a number of vegetarian recipes, they are all yummy and easy to make.

Yahoo group called the shortcut vegetarian.

In the meantime, here's a real quick yummy recipe:

Stir fry Quorn tenders, peppers and onions in a little olive oil for about 3 minutes. Add desired amount of Teriyaki sauce and stir-fry another 3 minutes. You can also add other veggies that you may like (water chestnuts, broccoli, snap peas etc).

I like student cookbooks- they're as easy as can be, but have some great stuff in them too. There's loads of special veggie ones.
