i usually get the Pho Tai Bo Vien~
Tái: rare beef steak slices
Nạm: sliced flank
Vè Dòn: crunchy flank
Gầu: fatty flank
Chín Nạc: sliced beef brisket
Gân: tendon
Sách: tripe
Bò Viên: beef meatballs
theres also Com Tam (Broken Rice) which also gives you a variety of things to choose from. you can mix it up. =] you don't have to follow the menu. haha
you should try some Goi Cuon! =] and you should definitely eat Banh Beo if the store has it!! thats soo good!! you should google an image to see how it looks like! ^^ its this tiny rice flour thing that you steam, and then there is 2 types of toppings. either the dried one or the wet kind with meat and shrimp. & you put on some nuoc mam. its super good! ^^ you can't just eat one! haha

If it's a genuine Vietnamese restaurant, pho and spring rolls. If you're venturesome, ask for the nuoc mam (fish sauce). It's a bit strong for most Americans, but it's definitely an acquired taste. I love it!

Pho - it's like ramen but lighter, the noodles are made of rice. It's really good with a different types of additions like steak, chicken or shrimp. Spring rolls are good too. Like egg rolls but not fried. Like a salad wrapped in rice paper. Good and healthy cuisine!
