you can eat anything except for meat. This means no poultry, pork, beef, venison, lamb, etc. In addition, strict vegetarions do not eat fish or shellfish. As alternatives, veggie and soy burgers are great. Other than that, you may eat fruits, vegetables, whole grains, legumes, and dairy. If you are talking about vegans, they eat no product that is derived from animals. This means no meat, fish, dairy, or eggs. And no food cooked with animal byproducts such as butter. Nothing. Not even a little milk in macaroni and cheese. Vegans use soy products instead. Its easier to stick to the vegetarian side of it, but veganism is a growing trend.

Parmesan-Crusted Vegetarian Sandwiches:

6 tablespoons unsalted butter, softened
1/4 cup freshly grated Parmesan cheese
Salt and freshly ground pepper
8 thick slices of firm white or oatmeal bread
1 tablespoon plus 2 teaspoons mayonnaise
1 tablespoon plus 1 teaspoon Dijon mustard
2 ripe avocados
2 tablespoons fresh lime juice
12 thin tomato slices
4 thin red onion slices
2 cups alfalfa sprouts

1. In a small bowl, blend the butter with the Parmesan and season with salt and pepper. Spread 1 side of each bread slice with the Parmesan butter. In another small bowl, blend the mayonnaise with the mustard. Halve and pit the avocados and thinly slice them lengthwise. Sprinkle the slices with the lime juice.

2. Put 2 to 3 slices of bread, buttered side down, in a large skillet set over moderate heat. Cook until the bottoms are crisp and deep brown, about 3 minutes. Remove from the pan and repeat with the remaining bread.

3. Put 4 of the cheese toasts on a work surface, browned side down. Arrange an avocado half and 3 tomato slices on each toast and season with salt and pepper. Top each with 1 onion slice, 1 tablespoon of the mustard-mayonnaise and 1/2 cup of alfalfa sprouts. Top with the remaining cheese toasts, browned side up.

Yield: MAKES 4 SANDWICHES

All fruit, pasta, rice, dairy, Boca products, Morning Star products, beans, many different types of bread, corn and flour tortillas, eggs, oats, grains, nuts, soy products, honey, sugars, syrups, chocolate, gum, herbs and spices, ANYTHING without meat of any sort and without stock or broth or seasonings of an animal. F.Y.I. I love to eat different vegetarian pizza combinations with Cajun crust and Ranch dressing.

You can also eat all fruits, breads, pasta, rice and soy based products such as tofu. Depending on why you are vegetarian and how restrictive you are, you can also eat anything made with milk and eggs.

One of my former co-worker's described her diet as eating anything that didn't have blood flowing through it, ie meat.

Wood, rubber, and glue.

Just kidding. It's easy to find non-meat foods. Just think of your food groups- grain, fruit, vegetable, dairy, sweets, and even items in the 'meat section' like nuts and fish if you like.

A myriad of tofu and soy based products, including fake lunchmeat, entire fake turkeys - they're called "Tofurkeys" for crying out loud - veggie burgers, organic eggs, cheese, pastas, etc. etc. That crap is all my sister eats.
