Actually in some recipes Uthappam has more rice than a dosa - it is more closer to idly batter. My mom in law used the same idly batter for uthappam after a day or to when it starts to ferment to give it a authentic taste (she is a south Indian!)

But no, you don't flip over a dosa - it is spread so thin ly that you don't need to. In the case of a Uthappam, you need to flip over to cook it properly.

yea they are made from the same batter.But you do not flip over dosas. You do however flip utthapam once for a couple of minutes 'cause it is thicker.
