So my family and I went out for dim sum. One of the selections was this shrimp in a green peper.. i'm not sure how this was cooked beucase the sauce on it tasted like the same sauce in the shrimp dumplings... so does anyone know what sauce and/or what dish i'm talking about?

It is a typical Cantonese cooking ... originally the filling should be fresh fish paste (ground fish meat + chopped green onions + corriander) but when I was living in Toky, there was no way to find fresh fish therefore I used ground pork or chicken + ground shitake mushroom and the taste was great. Here is a photo of Cantonese stuffed green pepper and the recipe, they use tofo.

Here is my simple pork filling recipe

200 g ground pork
4 dried shitake mushroom, soak in water till soft, remove stem and diced
1 stalk of green onion, finely chopped (optional)
1 tablespoon soy sauce
1 teaspoon of cooking wine
a pinch of salt
2 teaspoon corn starch
1 teaspoon garlic powder
1/2 teaspoon of sugar
1 egg white beated
cooking oil for frying

Sauce
1 slice of ginger, crushed
3 tablespoon Light Soy Sauce
1 teaspoon cooking wine
1/2 teaspoon sugar
2 tablespoon chicken stock
1 teaspoon corn starch
Grated white pepper powder
a few drops of sesame oil

1) Mix ingredients (except sesame oil) of sauce in a bowl, set aside
2) Put all filling ingredients in a big bowl, blend the mixture clockwise slow with chopsticks till it made a smooth paste. (You also can blend it with food processor.)
3) Stuff filling on halved bell pepper then fry the pepper with the filling facing to the oil (heat the pan on high heat, when the oil is hot enough, turn it to low heat before you put the pepper in), cook for till turned golden in colour. Remove from pan, drain on paper towel
4) Clean the pan, add oil, ginger slice and sauce, stir fry for 30 seconds then turn heat to low, put peppers into the sauce, cook till the sauce is thicken and the filling is fully cooked. Sprinkle sesame oil then serve immediately.

You can replace minced pork with minced chicken. I didn't put the measurement of green bell peppers there because it all depends on what size you could get in your supermarket, I would advise you to buy the small ones, it saves the cooking time while you can keep the moist of the filling (juicy).

I know what dish you are talking about. My mom makes those at home all the time. The shrimp paste inside is made out of shrimp, waterchestnuts and scallions. My mom uses a little bit of everything and they are soy sauce, sesame oil, oyster sauce, white pepper, cooking wine, salt, sugar to marinate the meat for about 10 minutes. and then you put the paste in the half green pepper and pan fried them.
