I was born and raised in San Diego. Moved away and haven't had a decent, authentic mexican meal since. There are a lot of mexican restaurants all over this country but, there are no good mexican restaurants outside of the southwest.
My brother moved to Florida and craved real mexican food so terribly that I would ship it to him in frozen packs.
I live in Northern California now and travel an hour to the nearest authentic mexican food place. Not to say there aren't a dozen imposters between here and there.
That's what you should focus on, creating an authentic mexican cuisine in a place where they think mexican and Taco Bell are the same. There are transplants like me all over the place that would keep you in tortillas and beans.
I have spent a lot of time in states where I couldn't even find the ingredients in grocery stores to make mexican food.
And, just for kicks, what is up with the anti-avocado thing going on back east? Some sort of revenge for what we did to pizza?
The southwest rules.
Good luck with your venture!

I know a small town called Hayden, Colorado. It has a pizza joint and a restaurant called Food Mill which is a "mom & pop" restaurant. That's it.
