2 cinnamon sticks, broken in half
8 allspice berries
4 whole cloves
2 peppercorns
4 cups water
16 cardamom pods, lightly crushed
4 slices fresh ginger, lightly crushed
2 tea bags or 1 tablespoon black tea
1/2 cup milk (or to taste)
3 tablespoons honey (or to taste)

With a mortar and pestle, coarsely grind the cinnamon sticks, allspice, cloves and peppercorns.
In a saucepan, combine the ground spices, water, cardamom pods and ginger.
Bring to a boil, reduce heat to medium-low, cover and simmer for 10 minutes.
Set aside, covered, for 10 minutes.
Add the tea bags or loose tea in a tea ball to a teapot.
Return the spiced water to a boil and pour into the teapot.
Let steep for 2-3 minutes , then strain the tea and serve with milk and honey on the side.

Why not try and make chai from scratch? You can vary the following according to taste. I love the stuff as an alternative. In India almost every street corner has a "chai" stall where its popularity makes even the most modest business a going concern :-) 1/3 water

1/3 water
2/3 milk
1 teaspoon of tea for each cup measure (plus a bit extra) freshly chopped ginger
cardamom pods
a little piece clove (optional)
enough sugar to make it sweet
Throw it all into a suacepan cold and bring slowly to a boil. When boiling turn up the heat and swirl it around until it reaches the desired strength and the spices provide a kick. Strain it into small glasses.

It is not everyone's cup of ... (sorry) but about 800 Indians get off on it.

Hate to disappoint you all, but chai is just a word for tea. You'll come across it used in India and Turkey. The recipes you have been given are for Marsala chai (spiced tea). Cardamon etc. added to black tea. In India it is often sweetened with condensed milk instead of sugar or honey.

Spice ingredients for one pot of tea:
1/2 of a star anise star
10-12 whole cloves
6-7 whole allspice
1 heaping teaspoon of cinnamon bark (or 2 short sticks)
6-7 whole white peppercorns
1 cardamon pod opened to the seeds (not pictured)


Other ingredients:
1 cup water
4-6 cups whole milk
2 heaping tablespoons of a high quality full-bodied broad-leaf black tea (Ceylon, or English Breakfast if a broad-leaf Ceylon is not available)
Sugar


1 In a 2-qt saucepan, add spices to 1 cup of water. Bring to a boil; remove from heat; let steep for 5-20 minutes, depending on how strong a spice flavor you want.

2 Add 4-6 cups of whole milk to the water and spices. If you don't have whole milk, you can also use non-fat or low-fat milk, just add some cream to it, a few tablespoons. Bring the milk and spice mixture just to a boil and remove from heat.

3 Add the tea to the milk and let steep for 5 to 10 minutes to taste. (Option at this point - reheat to a simmer and remove from heat.) You can add sugar at this point, or serve without sugar and let people put the amount of sugar in they want. Traditionally, sugar is added before serving.

4 Strain into a pot. Serve. Add sugar to taste.

the classic simple way to make chai is.......

the teabags ( u can get them from the Indian stores)

1/3 cups of water

1 or 2 tbs of sugar

1/3 to 1/2 cups of milk




have a sauce pan, and put water and sugar in there.
let it boil.
then add the teabag (1).
let it boil...again.
add milk....... you have to keep
a eye on it, because it can boil and spill real quickly...
after the "chai" has boiled and risen to the top....
u can pour it into a mug or a cup....
