Tofu is different ion two ways:
1 - the firmness of the tofu makes it appropriate for different uses. Soft tofu steams well, firm tofu is better fro frying of stir fry
2 - the ingredients will differ, mostly in terms of preservatives, and of course the type of soy used - is it organic, or farm produced

It is naturally very low in fat. If you're worried about it as a diet food, it is naturally low in calories and has plenty of protein. It is very good for you! But try not to cook it in oil because it is very absorbent. The best tofu I've tried is called "Orginial Tofu Grills". It is pre-cooked, but I marinate it and then broil it. It comes out firm, but tender, like chicken or something, and less than 100 cals per serving.

Yes. Some are made of Genetically modified soy beans. Some are Bio beans - a difference in quality and taste.
Some are marinaded - some plain.

There are reduced fat tofus. You generally have to go to Trader Joe's, Wholefoods, or your local little health food store to find it, thought.
