Get Velveeta, milk, a can of green Chile's and Rotell brand canned peppers. cube 2 boxes of Velveeta and slowly melt in a pot with the milk (added to keep the pan wet so not too much) after you get that going just add the full amount of the rest of the ingredients. My wife is from Texas where they take their Queso seriously and this recipe is great!!!!

Any good grocery has a hispanic/mexican food section and in the cheese part there should be a cheese called Queso...melt it with some diced jalapeno and a little milk to make it as thin or as thick as you like. Wal Mart also sells something called "melting cheese" in the deli cheese dept that you just melt and its delicious.

CHILE CON QUESO
1 c Asadero cheese; shredded
4 oz Jalapenos, chopped;
-drained, OR
4 oz Poblanos, deveined &
-julienned
1/4 c Half & half
2 T Onion; finely chopped
2 ts Cumin, ground
1/2 ts Salt
Heat all ingredients over low heat, stirring constantly,
until the cheese is melted. Serve warm with tostaditas.

honestly, cheese sauce, melted with chopped jalapeno peppers or pepperocini peppers over tostitos rounds. different recommendations I even have tried are with picante sauce and/or bitter cream blended with olives. thank you a lot, now I could bypass make me some! LOL!

probably what you tasted was mexican cheese..
you need to find a mexican food store that sells mexican cheese or "queso"..
you can add whatever you like to the mix, including but not limited to: peppers, beans, salsa, green onions, tomatoes, etc..
