For hashbrowns/fries, you take a large skillet and put enough oil to cover the bottom, then add potatoes and cook to perfection. Grits, follow the recipe on the box. Pierogies, that is a lot of work so I buy Mrs. T's pierogies in the frozen food section of your supermarket. Easy and good.

Pierogies are really special and take a lot of time from scratch, but if you are just cooking store bought a fry pan or a flat pancake griddle are fine. Same for home fries. You ca precook the potatoes by boiling and stick them on or in a pan with some hot oil. When the potato is brown flip or scramble around to get the other sides of the small chunks you have cut the potayo in. In the last few minutes put some cut onions in the pan with the potatoes and you will have a nice hash brown and onion dish. Grits just get boiled until soft and the water is absorbed. In the south they make shrimp and grits, and cheese grits, both very good.

I don't know about pierogies or grits, but hash browns or homefires are easy peasy and you do not need a deep fat frier either. that actually sounds kinda gross. here is what you do. boil the potatoes whole, or cut in quarters if you like to leave the skins on. let them cool completely (sometimes I do this bit the night before) then for home fries, cube them, add kosher salt and pepper, some paprika, and brown in olive oil in a frying pan over medium heat. hash browns, basically the same thing, except instead of cubing them, shred them, then add the seasonings and brown in the oil in the pan. sooooo good. oh, and don't forget to take them out with a slotted spoon and drain on paper towels.

Hash browns aren't the nasty preformed things that you get here in Europe...and they most certainly aren't deep-fat fried.

To make real hash browns, you need to bake a potato the night before and then put it in the fridge. Using a medium grater, grate the potato, skin and all onto a plate.

Shallow fry the grated potato in a frying pan with some hot oil (or for even better flavour buy a block of beef dripping from the supermarket and fry them in that).

If you live in Europe, you won't be able to buy grits. Grits are made from Hominy. Hominy is sweetcorn that's been treated with lye (sounds nasty, but tastes good). The Hominy is then dried and ground to make grits.

If you can buy grits, you need to cook them with the amount of water that it states on the packet, but cook them about three times as long! If you have access to bacon grease (dripping), then chuck a teaspoonful of that in as well.

Grits absolutely must be eaten with butter, salt and pepper. You must not, under any circumstances add milk and sugar!!!

No idea about Pierogies.

For health reasons, you can fry hash browns in a frying pan with a little bit of cooking oil, turning them every so often. You can also bake them in the oven. I rub shortening or cooking oil on the pan, and turn them now and then, as well as for home fries. If health isn't an issue, and you want better tasting homefries and hash browns, they can also be cooked in a large pot of hot oil, but keep an eye on them. Don't leave the kitchen...many fires have started because of the hot oil, and neglect. I have never cooked perogy's, but they can be boiled. That's how my sister makes them. I have never made grits...sorry.

Go to wal mart and get you a Fry Daddy. You'll wonder how you made it all your life without one!
That's the easiest and best way to fry stuff.
As far as grits, you can buy instant grits in the cereal aisle at the grocery store.
I don't know what pierogies are. Sorry.

ome fries and hash browns just need a skillet w/a little bit of oil in it. They brown better if the heat is rather high - so don't use butter or something like that that burns quickly. Lard or bacon fat would be good. Can't help w/the pirogies or grits though. Don't like them grits:)

Cook hash browns in a frying pan not in a deep fat frier. All you need for a deep fat frier is a big pot to hold the oil.

If you have a food processor, just put it on the "shred" blade and cut up the potatoes. Then just put cooking spray and a little oil in a big pan on the stove. Season potatoes with some salt, pepper, and onions, if you like. They cook potatoes until they are lightly browned.

My wife just uses a regular pan.

Vegatable oil, lets it heat up and throws the fries, tator tots, egg rolls or what ever in.

Get a screen to cover you can with though. There can be a LOT of splatter.
