Fried potatoes are the BEST!!
Peel and slice the potatoes lengthwise into quarters and then chop them up.
Heat 2 tbsp oil in frying pan.
When hot, add potatoes. Season with Salt, seasoned pepper, garlic powder, and season all.
Slice 1/2 stick of butter into quarters and place over the potatoes. Cover with a lid and rotate potatoes every so often. (What I mean is use a spatula to flip the potatoes around so that they all get cooked equally. ) Cook until tender.
These are to die for when topped with my homemade bacon country gravy!!

Prefer home fries. Bake the potatoes the night before. Dice. Sauteed in a little bit of butter. Yummy!

By far, the best I've ever tasted was thin sliced with sliced onion and crushed garlic. That mixture was sauted. I've tried to duplicate it, but failed miserably.
So I have home (or country) fries. Most cooks (myself included) either over or under cook hash browns. If I ever find a place that can make great hash browns, I'll go back. But for now, it's home fries.

I'm southern so grits are the main fare instead of potatoes.
But when I eat potatoes for breakfast I love hash browns, scattered, covered, chunked and diced!

Homed fried with butter,chopped onions,salt and pepper.I sometimes add chopped bell pepper or eggs close to the end of cooking time and scramble it in.Great with biscuits or in a flour tortilla.

I do not TAKE potatoes for breakfast - and I don't EAT them either!
What sort of person would eat fried potatoes for their first meal of the day??? Yuk - all that grease coating your stomach, making you nauseous ...
