I've answered assuming you are in the UK (like me), if not apologies this won't be relevant.
There's this great shop in Covent Garden - called the Australia Shop but they stock LOADS of New Zealand goodies as well. You can get anything NZ here - crisps, chocolate bars, drinks, beer, flags, patches, stickers, CD's - the works. You can shop online as well and they'll deliver; http://www.newzealandshop.uk.com/. They'd have everything you need for a NZ themed party.
For music to play look for Dave Dobbin, Split Enz, Crowded House. Don't forget they love their sheep!! You can also get some excellent wines from NZ, all good off licenses will have some. Good luck!

Foodwise, you could simply go all NZ: Have a nice lamb stew and get some Kumaras (I guess they'd be called sweet potatos in the UK/ US/ CDN), and serve a so-called "Pavlova" for dessert (it's what the French call Baisers, but with whipped cream and slices of kiwi fruit on top). Pour some NZ wines and sparkies (Lindauer being the brand to pick), and serve some Flat White Coffee with the dessert (basically, make a cappuccino with lots of steamed milk).
For decoration, there's a plant which has become the NZ logo - it looks like a swirl, but it's actually the tip of a furn plant. Should be easy enough to plaster the place with look-alikes.
And clothing-wise, well a few people here have been suggesting Maori stuff, but it's pretty hard to get right unless you are one, and keep in mind that new NZ friends you will make here may one day get to see your photos of the party and find it a bit odd, if not to say, if they're Maori, they may take offense (Maori generally tend to disapprove of Pakehas trying their stuff). So, if you want to do something safe, just have lots of wide-brimmed hats ready for your guests, and wear them - that should make for some real feel, and it's even realistic).

You will obviously need some great New Zealand Wine!!! Anything from Hawkes Bay!!! A few tinnies, and some kiwi's and it will be cracking!!!
My best friend is flying to NZ today actually!!!

I made a metre long cake in the shape of NZ when my brother and his now wife emigrated. It had a sea all around it and mountains - it looked amazing. I put landmarks on the cake and there were games on 'guess the land mark' etc.
