there is supposedly a special art of sushi...and the raw fish must be kept at a certain temperature...cut a certain way...and things like that...it is usually pretty safe...when ever you go out for sushi just take a quick look at the sushi bar and if its clean you can trust that the sushi Will be too...fish is actually very good for you raw or cooked...its raw chicken that can cause salmonella...
hope this helps!

Uncooked CLEAN meat is fine to eat, but meat that has been exposed to bacteria must be well-cooked to kill the bacteria. Sushi is harvested from freshly-caught fish, usually on the boat, before bacteria from the fishes gut can migrate into the flesh. The same is true of the highest grades of beef used to prepare "blue" or rare steak, and to make "steak tartare", which is basically raw ground beef, and is both good for you and exceedingly delicious!

Health officials are warning people all the time to be very careful if they eat sushi (and raw oysters, etc) because people do get sick from it. It can have the same dangers as eating raw beef, pork, etc. But it is more accepted to do than eating the raw beef, pork, etc. So there are places that serve it and it is legal. You take the same chances when eating sushi as you would eating any other raw meat. Plenty of people have gotten sick from eating sushi.

Sushi is becoming dangerous, but no one really talks about it. For instance, in Hawaii where many people eat sushi every day, the University of Hawaii has done E.coli studies of the ocean waters around every island there. The waters are becoming so filled with E.coli, that eating raw fish is becoming dangerous.
Many reports have also come out recently about the levels of mercury in our waters. Tuna has been shown to contain high levels of mercury, and yet is still used in sushi.
I will admit that I like sushi, especially with wasabi, but with the danger of E.coli and mercury, I would rather have my fish cooked.

Most sushi seafood is extremely fresh, and even carries its own grading system, so it is "sushi-grade."
And who said raw meat was bad for you? Depends upon the meat. Raw ground beef or fresh chicken is probably not a good idea, but rare steaks are fine. They've all but wiped trichonosis out of hte pork population too.

The quailty of the Fish in Sushi is of the highest. I too prefer the cooked items.
Raw meats are not all bad, but honestly I don't take the chance.

Well i like raw meat with some spice and special dishes it is very good. but in general i am fine with raw meat and i am not to crazy about fish. Maine idea you need to get best quality meat not from the store go to the farm or visit Amish people they have very good quality products. Other way you wont know from what kind of poison you've died.

Sushi should be eaten immediately, preferably while at the Sushi restaurant. There have been instances of customers getting sick when taking their Sushi home and eating it a day or two later.

When it comes to raw meat, lots of people around the world eat it without any ill-effects! You've got French people - and people in French restaurants all over the globe - eating raw minced beef...
You've got people in Germany and Japan occasionally eating raw horse...
You've got stuck-up, snobbish bar-stewards in ALL countries insisting that steak and roast beef should be oozing blood in the middle - they claim that anyone who eats beef that's brown all through is a stupid peasant!!
As for sashimi (raw fish) for use with or without sushi rice, it has to be TOTALLY fresh, it must have been prepared in the right way, and stored in a certain way onboard ship, it must be salt-water fish, it must be handled in a hygienic way, and it must not be left lying around after preparation! 2 days in the fridge is the absolute MAXIMUM!!!
Frankly, unless you live near a sea-port where fishing trawlers etc. dock regularly, you don't stand a chance in hell of getting decent fish! Inland sashimi in any country except Japan is seriously inferior, and really not worth the effort!!! It isn't old enough to be "bad" for you - it's just not quite fresh enough to taste tip-top...!!
