Hi there. I was diagnoised about 8 months ago and have done many many searches for diabetic recipes. The first thing you should know is BE CAREFUL OF DIABETIC RECIPES! Make sure that your husband's doctor (preferable Endo) sends him to a nutritionist that specializes in diabetics. That nutritionists will give him a meal plan that lays out how many carbs, calories, etc he should have per meal/snack and then you can plan meals around this.
The reason that I say to be careful of diabetic recipes is that I have seen many of them that claim to be "diabetic" but list the carb content at 96 grams per serving (for example) and that is MORE THAN TWICE the number of carbs I can have PER MEAL (45 carbs per meal for meal) let alone for one item of the meal. This is why a visit to a nutritionist should be your first stop.
Important things you should know in the meantime.
1. PAINT YOUR PLATE WITH COLOR. If you are eating lots of bright colors (vegetables, etc) chances are you are on your way to eating healthy. (This goes for non diabetics as well.)
2. READ ALL LABELS ALL THE TIME: Even if you think you know the nutrition information, look at the label. Nutritional labels have changed in recent years and they making eating healthy easier than ever before.
4. PORTION CONTROL. Once you really take a hard look at what one serving is you may find yourself making healthier choices. For example, I "can" have mashed potatoes but the serving size is so small I prefer to use my carbs elsewhere.
5. GET RID OF THE PROCESSED FOODS. Goodbye Hamburger Helper, etc. All those chemicals are not doing either of you any good and is really hurting your diabetic. Stay fresh and make the stuff homemade. Besides, it'll taste a whole lot better. Trust me on this.
6. AIM FOR EATING HEALTHY. We all know what we should be doing. Now, more than ever you need to stop and think about what you are ingesting. Are those french fries really worth it?

I am writing to tell you what an incredible impact these methods had on my life! I have had type 2 diabetes for 27 years. For me, the worst part of this horrible disease is the severe pain I constantly get in my feet. The pain is so bad that I avoid standing and walking as much as possible. Jean Pare' has a book out called " Company's Coming " diabetic cooking I find very good.Great tasting recipes for the entire family.Costs about $20.00 and very well investing in it.I love the book.I am sure you will also.

Having both type 1 and type 2 diabetics in the family (my son and recently my husband) I am responsible for their dietary needs. Following the guidelines for their daily intake of carbs proteins etc is not as hard as one may think. Diabetics as long as controled can eat anything within moderation even the occasional sweet treat. i have been a diabetic for 33 years... i make a great cheesecake..... get the fat free cottage cheese... add sugar free jello (any flavor) 1.5 cups of water for the jello, and put in the blender. Coolwhip has sugar free now... that is a good add to the blender toooo. pour onto a wheat germ or sugar free cookie crust (just smash some cookies and put in the pie plate) and refrig..... this is very tasty! good luck!
