reason to send it back to the kitchen? I have seen it several times that people were served that and did not do anything about it.

If the mussels have been steamed its hard to believe that its birds sh*t.
There is a type of worm that lives on mussel shells, that forms a squiggley white tube as a protective case. That's probably what you can see in which case its perfectly natural and should not be sent back.

Mussels should be thoroughly scrubbed and debearded before they're even cooked. If they still have bird droppings on them, then the cook or the prep person isn't doing his job properly.

And since mussels are usually steamed, that means the water is contaminated with the bird excrement, too, so the whole pot is affected. That is DEFINITELY a good reason to send the whole thing back to the kitchen.

We own a restaurant and I can almost assure you that what you saw was not bird poop. I think you should ask one of the restaurant owners if you could go into their kitchen and just watch the cleaning and cooking process of mussels. You will understand afterwards. And if it really was bird poop, don't ever ever ever go back to that restaurant!!

Mussels would be scrubbed and steamed before being served to you. If there was anything foreign on the shells, it would be extremely unlikely that it would still be there after all that. If you're sure that's what you're seeing, then by all means send them back.

If it only appears to be excrement, it might be a calciferous build-up; in that instance it will be hard.

But if it is a soft substance - you might question the waiter and ask for a fresh serving...

P.S. Remember - Mussels consume excrement and algae...

I dont think it would be bird doodaah as sometimes salt from the sea water can dry in a way that it would appear to look like bird pooh as they are cooked rapidly at a high temperature in wine which would deffinetly remove anything such as that. what you are infact are seeing is the salt that has been left behind when the liquid has evaporated from the heat!!

some times on mussels shell you get small barnacle that is what you might be seeing , when cooked they turn white and bits fall of and look like bird exrement ,

its not bird **** its barnacles i serve mussels everyday in my restaurant and they always have white stuff on the shells if it really was bird **** then dont go back there

By all means, send it back. Obviously the mussels weren't cleaned very well before they were cooked.

well if it was bird poo?? id guess not muscles are boiled before serving so any dirt or poo should be dissolved before served id say it was the outer of the shell
