I love my eggs direct from my mum and dad's farm, fried in lots of olive oil so they are still runny, served with golden brown toast and a bit of brown sauce, with mug of darjeeling tea......oh and eating them in nice company!

I like my eggs like this!
Bacon, Mushroom, and Cheese Omelet
Serves 1
3/4 Cup Eggbeaters
1-1/2 Tbsp Unsalted Butter
3 Strips Crisply Fried Bacon
1 (4 oz can) Sliced Mushrooms, drained
1/4 Cup Mozzarella Cheese, grated
4 Tbsp Hollandaise Sauce (recipe follow below)
1 Scallion, sliced thin, for garnish
Instructions:
In a large nonstick frying pan melt the butter over medium-high heat. Add the eggs and scramble slightly. Allow the eggs to coat the pan and cook evenly. Crumble the bacon into the eggs, add the mushrooms and cheese, and cook for 1 minute.
Carefully slide 1 end of the omelet onto a plate while folding the other end over on top, like a taco. Garnish with hollandaise sauce and scallions and serve immediately.

Hollandaise Sauce
Serves 6 (4 Tbsp per serving)
1 Cup Hellmann’s Real Mayonnaise
1/2 Cup Eggbeaters
2 Tbsp Lemon Juice
1/2 Tsp Mustard Powder
1/4 Tsp Salt
Instructions:
In small saucepan with wire whisk beat all ingredients until smooth. Stirring constantly , cook over medium-low heat until thick (do not boil).
Serve over eggs, vegetables or fish.

Boiling an egg is simple once you have mastered the basics.
Ingredients
2 Large Lion Quality eggs
Water for boiling
Pinch of salt
Buttered toast cut into soldiers to serve
Method
Place eggs in a small pan. Cover with at least 2.5cm (1") of cold water, add a pinch of salt and place the pan on a high heat. When the water is almost boiling, gently stir the eggs and set a kitchen timer for one of the timings below:
3 minutes for really soft boiled yolk and set white
4 minutes for slightly set yolk and set white
5 minutes for firmer yolk and white
6 minutes for hard boiled with slightly soft yolk
7 minutes for firmly hard boiled
Reduce heat slightly to keep water bubbling but not fast boiling and stir the eggs once more.
Once cooking time is complete, remove the eggs from the pan with a slotted spoon, place into egg cups and serve immediately with hot buttered toast soldiers.
Cooking Tip
To prevent eggs cracking, make a small pin prick in the shell at the rounded end to allow the steam to escape.

Over-easy with toast to dip in the yolk. I also toss an egg into boiling ramen noodles. I'm pretty sure it's healthier than using oil on a frying pan, but I could be wrong and it's all just the same.

If it's a weekend, then Stella would be perfectly fine. But I can't find Stella. Will have to make do with Sam Adams beer. Very fine it is too.
Actually love scrambled eggs with smoked slamon and champagne, being a posh tart.......... :) x

I enjoy my eggs , fried in best beef dripping. After lifting them from the pan, drop in a full slice of bread and fry till golden. Unhealthy I'm sure but vegetable oil does not do it for me. If you ever wonder what the fuss is about with organic foods, then try this for breakfast and you will know what old fashioned food tastes like.....

I only eat eggs with bacon when on holiday in England and that is not very often! Last time was on my honeymoon and my husband suffered a gall-stone attack afterwards!
